~*~Here is our family favorite!

BANANA NUT BREAD

3 ripe bananas, well mashed
2 eggs, lightly beaten
2 c. flour
3/4 c. sugar
1 tsp. salt
1 tsp. baking powder
1 c. nuts, coarsely chopped
2 T. butter, melted & cooled

Preheat oven to 350 degrees F. Butter a 9x5” loaf pan or 3 well washed & buttered 1 lb. coffee cans. Mix together the bananas, butter & eggs. In another bowl sift together all the dry ingredients, & add to the first mixture. Add the nuts & stir well. Put into a prepared pan or cans. If using the loaf pan the bread should bake for 1 hour, bake less than 1 hour for coffee cans.

Make your regular recipe for banana nut bread, then instead of using a loaf pan, pour it into an emptied, washed, greased and floured (or sprayed with Pam) 11-13 oz. coffee can. The can should be about 3/4 full, but don't fill more than that. It will probably take about an hour to bake at 350, but test for doneness with a toothpick.
Remove from the oven, let cool for 10 minutes in the can, then invert can to remove to cooling rack. You may have to run a knife around the inside edge to loosen it from the can.

I've never made it in a coffee can but have used 14-16 oz. canned vegetable cans and it works great. Just grease the cans and fill 3/4 full and bake. To remove, you let cool and open the closed end of the can and push the bread through.

Why are you baking in a coffee can? Is this for some kind of contest? A loaf pan would cost you a couple of bucks at a dollar store. I can't image that banana bread would actually cook properly in a coffee can. I think it would dry out around the outer edges long before the centre of it was done.

grease the coffee can, lower the oven temp 10 degrees, fill it 2/3 full and place a pan under it

Well I would say instead of baking in a pan you bake it is a coffee can. Might be tricky getting it out of can when done though. Should work though.

Same way you would make it in a baking pan. But WHY would you want to? And besides, do people actually eat that stuff?
