oil fish and grill pretty. cook for 2 mins and rotate about a 1/4 turn and cook for another 2 mins (this will give it nice checkered grill marks). repeat on other side. adjust the time amd temp to how you like it done.

Grilled Salmon Sandwich:
Serves 4
Flat, wide fillets cut from the tail of the salmon work well for this open-face sandwich.
2 tablespoons dry mustard
3 tablespoons packed light-brown sugar
1/2 teaspoon soy sauce
1 tablespoon olive oil
4 salmon fillets, about 6 ounces each
Salt and freshly ground black pepper
1/2 bunch arugula, leaves slightly wet
4 slices sourdough bread, crusts trimmed
1. Combine mustard and sugar in a small bowl. Stir in 1 1/2 tablespoons water. Add soy sauce and 1 teaspoon oil. Set aside.
2. Heat a grill or grill pan until very hot. Brush salmon with remaining oil; season with salt and pepper. Grill for 5 minutes, or until browned. Turn and cook for another 5 minutes, or to desired doneness.
3. Toast bread and place on plates. Top each with wilted arugula and a salmon fillet. Drizzle mustard sauce over top. Serve immediately.

Buy Cedar Planks from a nice grocery store and soak them in water. Season your salmon as you normally would and place on the soaked cedar planks. Place the cedar planks with the salmon on the grill and cook. Make sure your grill is set to a low setting so that you don't set the cedar on fire. It's ok if it smokes and chars a chars a littlle, it will add another layer of flavor to your fish.

Have it cleaned (gutted) but leave on the skin, head and tail.
Take onions and lemon, slice thin. Fill the inside of the salmon. Optional: fresh dill weed, too. Wrap in aluminum foil. Grill on the rack using indirect heat source. Check after 45 to 50 minutes.
The flesh should flake, but not be mushy.
Serve with mayonnaise, thinned with lemon juice and flavored with curry powder. (Also good with fresh vegetable dippers).

If you have a fillet,with the skin on 1 side., grille with skin on the grille low to medium heat for 10 minutes, in the mean time put what ever seasoning or sauce you want on the meat side giving it a chance to absorb into the fish. then turn fish over & let it go til you have a lght brown crust on top. turn over & place on the top rack if you have one, & let it finish cooking. use a thermometer to see if its ready, 145 degrees & it is done

throw it in an aluminum foil pouch with some butter and salt and pepper juce of a lime cook for four minutes turning once
i start it out on the hot center of the grill to sear the fish then scoot it towards the edge as it cooks

Marinate in Kraft's Sun-dried tomatoes and Oregano dressing. Grill on top of a foil and batter with the dressing while grilling it.. Yummy !

Use a grilling 'cage' and I brush on lemon and olive oil. You can add some thyme and marjoram to it too. Keep flipping it until cooked nicely. Healthy food source!

I think it's best to put it on or in foil, not directly on the grill; if you put it directly on the grill I believe it is likely to stick and fall apart. Plus, that way you can put herbs and lemon juice on it as it cooks.
