It's fun for them. And all kinds of dogs were first bred to help men in hunting hundreds of hundreds years ago. So basically the first hunting dog passed on his/her genetics in DNA as a "hunter" dog down to generation after generation of dogs. Today, even the most dominant dog will still go after a flying stick because they are still a hunting species. It's all in their genes.

I think it has to do with some dogs being bred to retrieve game, like Labrador Retrievers. Eventually the instinct gets into the DNA and is passed on genetically.
