so is it like when you make pancakes and when they bubble on top its time to flip them only with crumpets they are baked ??

The carbon dioxide released by yeast in the process of fermentation creat bubbles. The bubbles of gas try to rise to the surface of the dough, and in the process get trapped by the strands of gluten developed from the flour during the kneading and mixing process. Heat increases the release of gases until the yeast are killed, and the gluten strands are hardened by the cooking process. The gas eventually is able to escape- but the space they created in the dough before escaping is left behind as the hole you see. If the crumpets are leavened using baking powder or soda, there is the same gas release process- but it is a chemical reaction, rather than fermentation. The holes are still created in much the same manner.

the holes in crumpets are made from the tiny air pockets created by the air incorporated into the dough when mixed. as the the temperature rises when cooking so does the hot air out of the mix making holes.

well basically when it is cooking the crumpets are cooking and there is too much heat inside the food (lots of food) so it needs to let some out so it gets wholes
