Get a "complete" pancake mix and substitute cider or apple juice for the water mixing it one cup of mix to one cup of juice. Cook on Med-high in a non-stick pan using canola oil. The cakes will be tender, thin and delicious. Butter (not margarine) and syrup, then enjoy.

Breakfast Casserole
6 (1/2-inch) slices of bread - trimmed of crust and buttered
1 1/2 cups shredded cheddar cheese
1 pound country sausage, cooked and drained
1 1/2 cup shredded Monterey Jack cheese
1 (4-ounce) can diced mild green chilies
10 large eggs
2 1/2 cups half-and-half
1 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon freshly ground pepper
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano leaves
1/4 teaspoon paprika
Place prepared bread in greased 13 x 9 x 2-inch baking pan. Sprinkle in order given the cheddar cheese, sausage, Monterey Jack cheese and chilies.
Combine eggs, half-and-half and seasoning, mixing well. Pour mixture over layers. Cover and refrigerate overnight.
Bake at 350*F (175*C) for 50 minutes. Let set for 10 minutes before serving.
Makes 6 servings.
breakfast casserole:
4 slices bread
12 to 16 ounces bacon or sausage, cooked and drained
2 cups shredded cheddar cheese
6 eggs, beaten
2 cups milk
1 teaspoon dry mustard
PREPARATION:
Grease the bottom of a 9"x13" pan. Tear up 4 slices of bread and place in the bottom of the pan. Sprinkle cooked crubled bacon or sausage over bread pieces. Sprinkle cheddar cheese over the bacon or sausage. Mix eggs, milk and mustard together; pour over casserole.
Bake at 350° for 35 to 40 minutes.
Serves 4 to 6.

Make a cup of Green Tea with honey for sweetener. Have a slice of toast, which you can eat dry or with jam or peanut butter. And rinse and apple off, cut it into halves making sure you remove the seeds and core. Dip into peanut butter. Or you can go the banana route too.

Ingredients:
2 slices bread
1 ripe banana, thinly sliced
2 tablespoons creamy peanut butter
1 egg, lighly beated
2 tablespoons milk
1 tablespoon butter
1 pinch salt
pancake syrup or maple syrup
Cooking Method:
1- Spread breads with peanut butter (only one side of each breads).
2- Arrange half of sliced banana
3- Cover with another slice of bread (peanut butter side down).
4- Heat a nonstick frying pan and greased with butter.
5- Toast bread into egg and milk mixture and grill for 2 minute each side.
6- Served garnished with banana and hot syrup.
