Peanut oil is a "monosaturate," meaning a chain of carbon atoms with exactly one hydrogen attached to each carbon -- this causes it to remain stable (not gummy or smoky) at high temperatures.
Vegetable oil contains a mixture of monosaturates and polyunsaturated oils. Kept at high temperature, it is smokier and gummier as it stays hot for a long time. This mixture of oils is harder to digest, contains more free radicals, and changes the taste of the food more.
By the way, peanuts are not really "nuts," they are an oily legume, the fruit of a type of vegetable. There is real oil from real nuts from real trees available --virgin olive oil and hazelnut oil, for example. These are easier to digest than peanut oil, have fewer calories, and are even more expensive.

Well, peanut oil has a distinctive flavor, for one thing, so if that flavor is incompatible with what you are cooking, that counts. Also, there are several types of vegetable oil available, and they have different ideal temperatures at which to cook without scorching. Peanut oil is basically pretty light, and goes terrific with foods that don't really contradict the flavor, or need some other oil flavor (olive oil, for example, for Italian food) in order to taste authentic. It's excellent for french cooking.

In the Composition of Foods book they are listed together as far as nutrition and calories. Vegetable oil is a mix or can be corn or safflower or other. The oils from coconuts, and other so called tropical oils are more saturated. There are many that claim that they are better for you such as olive oil, safflower, and sunflower .

oils from different vegetables have different properties, most notably different flavors and different levels of healthfulness. peanut oil for example is high in saturated fat, which causes a broad range of health problems. the label on the vegetable oil will tell you what sources it is from.
p.s. oh yeah, lilrebel9631 is right about different smoking points.

Basically, Peanut Oil is used for cosmetic purposes on food (making the Thanksgiving turkey on TV look nice and brown) and is VERY fatty and is really bad for you.
Vegetable oil is used for cooking.
Edit: Get EVOO (extra Virgin Olive Oil). It's fat free and better for cooking.

Not a too much difference, but I personally think that it tastes different and I prefer Olive oil. It will never make you fat. The only oil I trust and eat.
