Ingredients:

3 1/2 pounds of grapes (Concord or Coronation grapes are good choices for dark colored grape jellies, but light colored grapes are delicious also)
1 package of fruit pectin
7 cups of sugar
1/2 teaspoon of margarine
8 canning jars w/lids and rings (or the equivalent of 8 cups)

Instructions:

Boil the jars and lids at least 10 minutes, then let stand in the hot water until you're ready to use them. Pleace the grapes in a saucepan and cover with 1 1/2 cups of water. Bring to a boil, then simmer for 10 minutes. Strain the juice from the seeds into a kettle. To get all the juice, use a spoon and press the grapes against the sides of a strainer. You should have about five cups of juice. Add the pectin and margarine to the juice and stir well. Bring the juice to a rolling boil. While you stir, have an assistant pour in the sugar. Boil one minute, stirring constantly. Remove from heat and skim off foam.

In the meantime, use tongs to remove and drain the jars and lids from the hot water. With a ladle, fill the jars to 1/8 inch from the top. Wipe the rim, place the lids on the jars and screw on the rings. Turn the jars over for five minutes, then turn them upright. Check the seal by pressing down on the center of the lid. It shouldn't spring back.

Cool the jelly completely and rinse the sides of the jar.

TIP:

STORING JARS OF JELLY OR JAMS

Wipe jars of cooled jams and jellies with a clean, damp cloth before storing. Label jars with flavors and dates. Store unopened jars in a cool, dry, dark place.

Use unopened cooked jams and jellies within 1 year of making. Once jar is opened, store in refrigerator and use within 3 weeks.

If a jam or jelly has mold on it, discard contents of entire jar.

Makes 8 cups of grape jelly.

Coconut Jelly Cake.

Basically you want to make this a two or three layer cake, following the regular coconut cake recipe, except inbetween layers you will add grape jelly. This is absolutely delicious!

Homemade jelly doughnut bites

Get some canned biscuts and roll out the dough, put about a half to a full teaspoon of jelly into each and then wrap around and roll into a ball. You can fry in pan or deep fryer and then sprinkle with conf. sugar. This too is delicious!

GRAPE JELLY

About 3 lbs. ripe concord grapes (this will yield 4 c. of juice)
7 c. sugar
1/2 bottle Certo fruit pectin
1 jelly bag or a sq. yard of cheesecloth several layers thick
Colander

First, prepare the fruit. Stem about 3 pounds fully ripened grapes and crush thoroughly in large saucepan. Add 1/2 cup water; bring to a boil and simmer, covered, 10 minutes. Place jelly bag or cheesecloth inside colander and place colander into large pan. Pour fruit and liquid in colander and close fruit bag or cheesecloth and make a large twist at top. Squeeze out juice. Use a potato masher to press jelly bag and help get all the juice from the grapes. Be sure you have 4 cups of juice when done squeezing in large saucepan.

To the measured juice, add 7 cups of sugar and mix well. Place over high heat and bring to a boil. Stir in 1/2 bottle of fruit pectin. Then bring to a full rolling boil and boil hard for 1 minute, stirring constantly. Remove from heat and skim off foam with metal spoon.

Pour quickly into glasses. Cover at once with 1/2 inch paraffin (melted to seal). Cover with metal lids or paper lids when completely cool. Label jars. Yields: About 10 med. glasses (5 lbs. jelly).

Grape Jelly

3 cups bottled Grape Juice, unsweetened
1 pkg. Powdered Pectin
4 cups Sugar

Combine grape juice and pectin in a large saucepot. Bring mixture to a rolling boil. Stir un sugar and return to a rolling boil. Boil hard 1 minute., stirring constantly. Remove from heat. Skim foam, if necessary. Ladle hot jelly into hot sterilized jars, leaving 1/4-inch headspace. Adjust caps. Process 5 minutes in a boiling-water canner. Yield: 5 half-pints

DIRECTIONS:
Sterilize and dry jars for jelly, and set side. I like to use my dishwasher. New lids are recommended for best results.
Combine grape juice and pectin in a large pot over medium-high heat. Bring to a boil, and stir one minute at a rolling boil. Stir in sugar for a few minutes to completely dissolve. Remove from heat.
Ladle the hot jelly into the jars, leaving 1/2 inch of space at the top. Wipe rims of jars with a clean dry cloth. Cover with a lid and ring to seal. Let stand 24 hours at room temperature, then refrigerate. Jelly may take up to a week to set. Once set, it is ready to serve. Store in the refrigerator for up to three weeks, once set. If canning for long term storage, process in a hot water bath for 10 minutes, or contact your local extension for processing times in your area


Jelly Cake Recipe.

1 cup sugar
1/2 cup butter
3 eggs
2 cups flour
1/2 cup milk
1 (12 ounce) jar jelly

makes 10 servings

40 minutes 20 mins prep

Melt butter and sugar together.
Add eggs, flour and milk.
The recipes says 1/2 cup milk, OR until of batter consistency at the bottom.

Bake in 4 greased and floured 9 inch pans at 400 degrees for 15-18 minutes, as the layers should be about 1/2 inch thick when done.
Melt the jelly.
Pour 3 ounces of jelly over each layer as they are stacked.
Sometimes I also frost the sides with Vanilla Buttercream Frosting, or serve the cake warm with whipped cream.

warm them up in a crockpot. Add frozen meatballs. A great appetizer for a party.
