Try this recipe:

Meat & Potato Quiche
1/2 lb. ground beef, browned and drained
3 Tbsp. cooking oil
3 c. coarsely shredded raw potatoes
1 c. grated swiss or cheddar cheese
12 oz. can evaporated milk
2 eggs
1/2 tsp. salt
1/8 tsp. pepper
1 Tbsp. parsley flakes
Combine cooking oil and shredded potatoes and press into a 9 inch pie pan. Bake potato crust at 425 degrees for 15-20 minutes, until beginning to brown. Remove from oven. Layer beef and cheese over potato crust. In a small bowl combine milk, eggs, salt and pepper and mix well. Pour over beef and cheese. Sprinkle with parsley flakes. Return to oven and bake 30 minutes more. Cool 5 minutes before serving.

A quick one and different one and also a great one to do if your on a budget - is to cook the meat in a frying man, getting it as tiny as possible. Drain the oil. You can boil some rice while your doing this and drain that too. Now that a large pot or deep skillet and combine them both and add some soy sauce and/or terr. sauce. It's got a bite of orient. I've had no complaints with mine :)

Meatloaf, hamburgers, tacos, spaghetti, mastecelli (which is spaghetti sauce, hamburger, and mastecelli noodles and then mozzorella cheese over it. cook in over until the cheese is melted), hamburger helper, chili, etc.
If you don't feel like cooking, hamburgers and some baked beans as a side would probably be the easiest. but it all depends on what else you have in your kitchen to cook up tonight.

+ tomato sauce, garlic bread, spagetti, salad = Spagetti
+ tortilla chips, lettuce, taco seasoning, shredded cheese, fruit = Taco Salad
+ fries & buns & fruit & baby carrots = Hamburgers
+ plain tomato sauce, red beans, chili mix, cornbread, apple sauce = Chili
Nobody at my house eats meatloaf, but that, too.
