I'm going to make a salad:
Lettuce, tomatoes, cuke slices
some rinsed frozen peas
some shredded carrots
a few bits of broccoli
I'll heat up some frozen pre-cooked turkey medallions and cut those into bite size pieces
I'll toast and butter one piece of bread for soft croutons
I'll sprinkle some shredded cheese, a red french and a ranch dressing and VOILA! Dinner is served.

If you want easy and healthy, then make a quiche. Everyone loves quiche. You can make the crust from scratch (easy) or buy it premade in the refrigerated section with the pillsbury goods.
Bisquick has some awesome quick recipes to whip up..
BTW, I am eating homemade chicken soup...another great choice.

do you have any meat unthawed?
if you have beef, try maybe some tacos or maybe some spaghetti
if you have chicken, why don't you smother it in spice and BBQ sauce and grill it?
You could do up some pasta and cook it with butter and spices rather than spaghetti sauce....

baked bean and cheese pasta , just cook some pasta , drain,add a tin of baked beans some grated cheese reheat until cheese melts and serve with black pepper ....simply quick and yummy!!!
