Myself and my family are mainly Caucasian Muslims. Wev'e always lived like westerners and dressed like them and because most of our forefathers are westerners from Europe who converted to Islam, we follow in their footsteps. We do not drink etc. but we do not dress like Arabs, speak the language or eat their kind of food. Some of the women in my family hardly where scarves and almost none of us (men) where dresses when going to mosque. We rather dress formally. I think that when people get into a religion they should not throw away their culture for it but rather try and combine them (culture, religionm, traditions etc).

you are right you have all rights to follow your culture, women head covering is a recommendation by the Quran and Hadith, but robes like Arabs are not mandatory though, welcome to Islam, peace

Islam did not come to change people's culture but to adjust it. So, whatever in your culture that is coinciding with islamic roles, you would better keep it but what is not you should leave it. So, the cooking style or the dress materials or design is not from Islam but there is forbidden food and islamic dress code so if you will follow these then no need even to know what the Arab do for food or dress. It is not necessary that you wear Arab clothing just because you are Muslim as long as your clothing is not revealing. You do not need to eat Arab food as long as the food is halal. Some people when they become Muslim do try to adopt the Arab culture but I don't think that that is necessary or even good. You may be a better example to Non-Muslims if you dress the same as they do. I think the Arab dress and culture can be off-putting to some who are thinking of converting.

you are 100 % right to follow your culture but respect to your religion also, and all i know that u don't have to wear dresses like Arabs as most of Arabs from Egypt , Syria , Lebanon, Tunis etc.. don't wear dresses but they wear like Westerns, and for women, i think veil is important for the Muslim woman.

head scarf is obligatory for amuslim women but the galabya for men is not

I think you are doing what is right for you and that's great.

BTW.....the "dresses" are not dresses. They are called caftans and usally worn with pants under them.
