I have read conflicting recipes. Some say add it at the last, and cook 3 to 4 minutes so that it won't get tough. Others say cook it 30 to 40 minutes so it is tender.

I am a personal chef, so this is vital to my work, but this is the first time I've worked with squid. Conflicting recipes suggest 3 to 4 minutes to keep it from being tough. Others say 30 to 40 minutes to make it tender. I've have not eaten in McD's since I was 7 years old, and then my sister chose it. I preferred not to.

Squid works alot like octopus.... Either short cooking or long cooking makes it tender, in the middle rubberizes it. ( I personally prefer short cooking times.) I Agree with the above though, cook it separately then add to the sauce just before serving. I would just saute it with just a little olive oil and garlic.
Also, even though you probably bought cleaned squid, it is a good idea to run your finger inside of each tube, just to make sure there is no cartilage left inside ( a long thin pointy piece usually), and check the center of each tentacle to make sure all of the beaks are gone.
With the way squid is processed, sometimes some of these things slip through, and, although harmless, can ruin a meal.

Best bet, go to food network and find Alton Browns Good eats. If I remember correctly from the squid episode, there are 2 chances for it to get hard and chewy, if you cook it too little or too long, either way, it'll be a disaster, and I'd get you the link but I have a firewall up at work. The episodes are called Squid Quo Pro I and II (2 different episodes) That should help you, I promise.

That sauce is for making spag bol You can buy sauces called pasta bake sauces. Sometimes you dont need to cook the pasta you just put pasta in an oven proof dish add the sauce some water, then put in the oven for 20 minutes and then take it out add cheese then put it in again for another 20. Dolmio make pasta sauces but you have to cook the pasta and then you put it in the oven with the sauce and cheese for 20 minutes. You can also buy sir in sauces and you just boil them in a pan and add to fresh cooked pasta. Im not sure if the bolognaise sauce would work but you should be able to heat it in the pan. But when you make pasta bake it tastes much nicer!

it all depends on the quality of the squid if its baby suid and small it should be put in and taken out after 3 minutes if your squid is larger boil it till it becomes tenderlike 40- minutes or more your finger hasto go thru it another tip is add milk and salt to it and one more tip if your cooking it add wine corks it will help tenderized them a sicilian method.

the longer you cook it the tougher it will get.........try cooking it just a few minutes taste then cook the rest for 30 to 40 and resole your shoes...well adding to that a chef would not even asjked that question shrimp is the same way ...your best bet is to bread it fry then add it just at serving ....

You don't cook squid in the pasta sauce. You cook the squid and then pour the sauce over it.
