Both.

Jesus is the flawless sacrificial lamb that God sacrificed for the forgiveness of our sins.

Jesus is the Good shepherd leading His flock down the path of righteousness.

They mean two different things, but they both are metaphors describing Jesus.

either, depending on what he's talking about.

The shepherd is a metaphor for a leader, I guess. Pastors are referred to this way as well, not as THE Shepherd, but a shepherd. Jesus being the lamb is a metaphor about Jesus sacrificing Himself for the sins of the world.

Both. He is our shepherd because He leads us back to the Father, He knows the way.
He is the lamb because He did what needed to be done so He could be the Shepherd.

John 1:29, "Behold, the Lamb of God who takes away the sin of the world!"
John 10:11, "I am the good shepherd..."
These are simply descriptions and Jesus fits them both.
