Pancake with Mango syrup
Make a simple pancake recipe, even ready made pancake mix will do.
Purchase a bottle of mango jam or you may use fresh mango sliced and cubed. Dilute the mango jam with a few tablespoon of water and corn syrup. If using fresh mangoes, simmer it with a pancake syrup of your choice and water. You may also use plain sugar and water. Whichever you prefer.
Top your hot pancake with a scoop of vanilla ice cream or some whip cream, then pour warm mango syrup.

I remember this like it was yesterday, even though it was a very long time ago.
I awoke this one Sunday morning with nothing but a stack of hot pancakes, smothered in fresh butter, "real" maple syrup and sprinkled with powdered sugar on my mind.
I grabbed my box of Aunt Jemima (original recipe) and gathered all the ingredients. I carefully mixed while heating my favorite griddle. When the first four cakes were ready, I stacked them on a plate.
To my dismay, when I went to the fridge I discovered I was out of butter and magarine. I was also out of maple syrup. Opening my cupboard I found no powdered sugar.
I grabbed a can of Crisco and some yellow food coloring and quickly mixed it up. I then found some raspberry Zarex.
All of a sudden, the woman I had picked up at a bar last night came into the kitchen. "what you doing", she asked. "I made you pancakes", I replied.
She quickly sat at the table and stared at the concoction I had made. "Got any powdered sugar" she asked. All I could find was a can of Ajax. I wrapped it in a towel and said "Allow me".
Moral of this story:
Be happy with your pancakes and the usual toppings.

Yogurt and fresh fruit.
Cream cheese and fresh fruit.
Banana's that are getting bad can be added to the batter and then you can top with butter and a sugar/cinnamon mixture.
I put chocolate chips in the left over batter and make small cookie sized pancakes. Nice snack later in the day.

Recently, when I went to eat at Cracker Barrel, I ordered pancakes with stewed apples with whipped cream on top. That was delicious! I think almost any fruit topping would be delicious.

Anything you like. Any fruit bananas,apples,peaches,nectarines. Nuts that have been candied with your favorite syrup. Peanut butter. Even savory stuff, make a sandwich out of them with mayo and breakfast sausage and egg.

Honey Molasses blueberry syrup or peach or strawberry-home made Jam is good to. I also like different flavors of cream cheese!

I like to use strawberries and whipped cream, I use chocolate chips, blueberries. One time I got creative and mixed the batter with bananas, and a lil cinnamon and it tasted just like banana bread.

Mix 1tsp.ground cinnamon with 4tbs.suger and sprinkle on top. It may sound strange,but try it a few drops of lemon juice enhances the flavour.
