When I cook egg rolls and crab rangoons, I have to maintain the heat of the oil at 350-375 degrees. I would imgaine that frying most other things would be similar.

any where between 350-375 degrees F. anything higher you are likely to burn the chips without even cooking them fully... if you have thick cut chips you want a lower oil temp....i would never drop below 350 otherwise the grease will soak into your food

150 degrees for about 3 mins then drain and cool turn oil to 190 shake chips in basket to roughen outer and cook for further 2 mins

To deep fry just about anything, your oil should be about 375 degrees F.

make the oil hot enough so that they fizz when you put them in.
this is the water turning to steam and cooking the chips.
the oil will then fry the outside brown
just try one on it's own first
