For appetizers I am making Whole Roasted Garlic Spread with Crusty French Bread as well as Parmesan Crisps with Goat Cheese Mousse. Both will be served with a refreshing sparkling wine. First course will be Insalata Caprese (heirloom tomatoes, fresh mozzarella, basil & olive oil). Second (and main) course will be Roasted Portabello and Prosciutto Lasagna. Wines for 1st and 2nd courses yet to be decided. Final (dessert) course is Strawberry Tiramisu with homemade lady fingers. Dessert wine is a Black Muscat. I'm having a dinner party tonight, by the way. If I cooked like this every night I'd be as big as a house and would never make it out of the kitchen due to endless dish washing!

I felt inspired tonight and tried something new. Quite enjoyed it, it was different.
Ham & Cheese Stuff & Puff....kind of a quiche, full of flavors.
4 eggs,
1 cup milk
1/2 cup light sour cream
1 envelope Stove Top Stuffing for Chicken
2 cups of cubed ham
1/2 cup shredded cheddar cheese
2 cups frozen broccoli florets
Beat first 3 ingredients together. Add remaining and mix. Pour in a 9 in pie plate, cover loosely with foil,cook 375 for 45 minutes. Uncover for last 10 minutes.
Awesome...and different.

fried chicken it has to be the BEST fried chicken that i have ever had in my life!!

4 skinless, boneless chicken breast halves
1 small can cream of chicken soup (do not uncondence it)
1 egg
seasoning salt
1/2 cup all-purpose flour
1/2 cup cornstarch
1/2 teaspoon garlic powder
1/2 teaspoon paprika
salt and pepper
1 quart oil or fry daddy
In a shallow dish or bowl combine the soup, egg and seasoning salt (be careful, soup is already salted); mix together. Dip chicken in mixture and coat completely. Set aside.
In a ziploc bag mix together the flour, cornstarch, garlic powder, paprika, salt and pepper. One at a time, place chicken pieces in bag, seal and shake to coat. Add more flour and/or cornstarch as necessary, but add them in equal parts (there should be an equal amount of each in the mixture).
Place chicken on a platter and allow to sit until it becomes doughy (this is critical, to ensure crispiness when fried). Heat oil in a deep skillet over medium heat; be sure to use enough oil to cover chicken pieces. Once chicken is doughy, test oil by dropping a piece of the 'dough' into it; the oil is ready when it starts to fry immediately.
Fry chicken pieces in oil for about 7 to 10 minutes each, or until cooked through and juices run clear. Drain on paper towels and serve.

i know it sounds kinda odd to use cream of chicken soup but it really is so good and so juicy you really should try it we will also have some canned peas but that is what i am having for dinner tonight

Just half fill your kettle with water, bring to the boil and pour carefully into whichever pot noodle takes your fancy, a real lazy mans choice for me tonight.lol

oven baked pork chops. Then broccoli and cauliflower just dipped in boiling water for three minutes.
Then toss that with one table spoon of Olive oil and minced garlic.
Bake for twenty minutes then add some grated extra old cheddar and bake till melted.serve with a Cesar salad yummy

We've already had dinner (it's 9pm in UK)
We had good old fashioned Fish N Chips, with Garden Pea's and lashings of Tartare Sauce! Yummy!

we had dinner already (time difference):
-italian mixed salad enriched with fresh basil, sweet corn,
cherry tomatos
- grilled beef steak with herbs-butter (butter, crashed garlic, finely chopped parsley, rosemary and grated lemon zest).
-oven baken potatos with olive oil, oregano+rosemary
ice cream
we drank water, but we enjoy a grappa now....
