Set V1 voltage to different values and run Pspice analysis on diode current and voltage as you have been asked. Perhaps run it for V1 = -20, -15, -10, -5, 0, +5, +10, +15, and +20 V.

If you do not want to iteratively collect the data, you can copy the circuit 8 times and renumber reference designators and show the plot for the diode parameters together.

Some versions of Pspice allow sweeping parameter values so that it will automatically reiterate for you.
