Quick Buttermilk Pancakes
1 cup buttermilk
1 egg
2 tbsp milk
1 cup flour
2 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
In a 4 cup measuring cup - to take advantage of the spout for easy pouring - whisk together buttermilk, egg and milk. Dump in dry ingredients and whisk until thoroughly combined. Heat a nonstick griddle until drops of water sizzle when sprinkled on to the surface.
Pour batter onto griddle in whatever size or shape takes your fancy. When bubbles form and edges look slightly dry, use a spatula to flip the pancake and cook for another 30-60 seconds, until second side is evenly browned.
This made about 12 4-inch pancakes.
Any remaining batter can be refridgerated overnight and the recipe can easily be doubled.

The best recipe I've used so far (and my family *loves* pancakes) is a recipe from the back of a Bisquick box. Now, not the regular pancake recipe, but the "Ultimate Melt-in-Your-Mouth Pancakes" recipe.
2 cups Original Bisquick® mix
1 cup milk
1 tablespoon sugar
2 tablespoons lemon juice
2 teaspoons baking powder
2 eggs
1. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
2. Stir all ingredients until blended. (Stir the batter with a wire whisk or fork just until the ingredients are moistened. Any remaining lumps in the batter will disappear during cooking.) Pour by slightly less than 1/4 cupfuls onto hot griddle.
3. Cook until edges are dry. Turn; cook until golden. To keep warm, place in single layer on cookie sheet. Cover with aluminum foil, and place in 200°F oven up to 10 minutes.
(Total time will vary; cook or bake time is per batch.)
High Altitude (3500-6500 ft): Decrease baking powder to 1 teaspoon.
Did You Know...
The lemon juice and baking powder provide a little more “lift” in these pancakes, making them lighter and fluffier than most. (also, the lemon juice and milk combination is the equivalent of buttermilk!)
I love to bake and I'm all for doing things from scratch, but when you find a recipe with a mix that's this good, you can’t beat it!

Oatmeal Pancakes
In medium bowl mix together
1 egg
1 egg white
1 1/2 c milk
1/4 c applesauce
1 tsp vanilla
add in and mix until blended
1 c oatmeal
1/4 tsp cinnamon
1 c flour
1/8 c sugar
1 1/2 c tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
top with syrup, peanut butter, whipped cream or your favorite topping - makes 10

South Dakota Farm Pancakes
1/4 cup flour
1 Tbsp. sugar
1 cup dairy sour cream
4 eggs
1 cup small curd cottage cheese
Sift flour and sugar into a mixing bowl. Blend in sour cream. Beat eggs until light and fluffy. Fold into the flour mixture along with the cottage cheese. Bake on a greased griddle on each side till golden brown. Serve with hot elted butter and hot strawberry or blueberry sauce.

Here is my family recipe and its great.
1 cup flour
1 cup milk or soy milk
1 egg
1tbsp sugar
1/4 cup sour cream or yoghurt
3 tsps baking powder
and you can add blue berries or chocolate chips
mix together and drop on to a greased hot pan. Cook over medium heat until the top is covered with popped bubbles. Flip over and cook until browned. serve with syrup

2 Eggs (seperated)
1 teaspoon sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/4 cup oil
1 cup milk (plus some for consistency)
1 1/3 cup flour
1 tsp. vanilla (opt.)
Beat egg whites until stiff - set aside.
Beat egg yolks, add sugar and salt, beat in.
Add baking powder, beat until just mixed in well.
Add flour, milk, and oil. Beat until smooth(not too much otherwise the baking powder won't react correctly) add vanilla.
Add egg whites to batter and FOLD gently. Let batter sit for 15-30 minutes prior to cooking.
I like to add a little canned pumpkin and pumpkin pie spice to mine..My wife loves 'em...There great for the fall holidays and stuff..
