I'm not sure about the nutritional content but I know that it is healthier for you because it's leaner than beef.

When I used to cook it while I was achef, we used the sirloin, Prime Ribs and tenderloins, the shoulders and rounds are more for marinating.

The tenderer cuts, as for nutritional content, low in fat, higher then beef in iron and protein.The most liely way is treat the tender cuts like beef, and if your buying the lesser cuts, marinating in an acid based marinate for 12 hours or overnight, then stew, grill or if you have a dehydrator, you cna make jerky also.

Buffalo meat is leaner then cow...........
Red meat should be eaten sparingly. Buffalo meat would be a healthier choice of red meat.
