I want to know why dog's don't like mail men? What is it that they don't like?

it is someone OUTSIDE OF THEIR PACK that is trespassing on their territory.

They would react the same to any stranger on their property.

Dogs in general are protective of what they consider their territory. They are also protective of their masters. So it isn't just mailmen that are being singled out but anyone unfamiliar or any animal (another dog, cat, etc.) that approaches their territory or their masters. Unfamiliar mailmen approach the house (territory) more frequently.

why "dog's" (ahem!) don't like mail men (postal carriers)?

Dogs are pack animals, and territorial. In addition, they sense fear, and most postal carriers have a good healthy fear of dogs.

Do yourself, and your postal carriers a favor -- introduce them to each other, so the dog knows that the postal carrier "belongs."

mail men don't allow dogs to eat their letters
and dogs are very much fond of eating up paper stuff
and so dogs and mailmen are traditional enemies
