My husband was on rotation for work in Denver for 6 weeks, my parents were nice enough to let him stay with them, and feed him for the whole time. We want to get them something nice say maybe around $100-$200, not just a fruit basket or a card. They are mostly home-bodies, and both are dieting (so no chocolate or cookies or otherwise food-ie gifts)... Please help with any creative solutions.

Homebodies, dieting, creative suggestions... hmmm...
Buy a coupon organizer (there is such a thing, plastic, foldover, inside has multiple, labeled slots), fill it with current coupons for all manner of grocery stuff (foods, toiletries, cleaners --- things that your parents would use). Include coupons for/from hardware stores, clothing stores, fast-food places (those places are now selling foods for the calorie-conscious), restaurants, lawn and garden places, super stores (any Wal-Mart, Sam's around them?). Include gift certificates if there are no coupons from their favorite places. Put a certified check or money order for the gift amout you wanted to give them ($100 - $200) inside this coupon holder -- in the first slot so that they won't overlook it. Mail it to them in a package and include a thank-you letter from you and your husband,signed by both of you. (Written by both of you, too!)
This will probably give them a smile when they read the letter, and provide them with interesting things to do when they go to use the coupons and/or gift certificates. (It got me out of the house when I got one! And, I didn't have to search for and cut out all the coupons -- they were right there!) People will use coupons that are provided to them without effort.
They will think of you each time they use a coupon. And, you could continue to mail them coupons as you find them available, so they would continue the trend, and save money while getting the things they need.
You have wonderful, caring parents. I know they raised you up well, too! Lots of luck.

How about a day spa with a couple's massage or foot rub? Or a housekeeper for a month? Or a framed family picture? Or gift cards to their favorite store? like Crate N Barrel, Target or Sears? Or a couple of good books, like a couples devotions, fun stories...like any of those ideas?

Here is one suggestion. Do they drink wine to relax or with a meal? If they enjoy wine you could gift them with a wine of the month. A bottle of wine is shipped to their home once monthly-a different type each month.
If they are on a special diet, find a chef in their vacinity and hire him/her to prepare several very healthy dishes that can be refrigerated or frozen. Then all they have to do is add a salad, heat and serve.

Do they like to watch movies? Buy them some DVD's and if they don't have a DVD player, buy them one and a few movies to go with it. OR
you could fix a really nice meal for them and invite some of their friends or other family members to join and dedicate it to them. OR
You could give them a nice gift certificate so they can get what they like. OR
You could pay on their utilities so they have more money to do with what they want.
