Here's the recipe I use (it turns out beautifully)...I'll post a link to the site, so that way you can also see the user revirews, and use the coversion table if you need to change how many servings you are making. Take care!

Salmon Croquet

Ingredients
1 can Red Salmon (Rock)
1 Egg
1/2 cup Chopped onions
1/2 cup Chopped green peppers
1/2 cup Chopped celery
1/2 cup Crackers crumbs
2 tbsp Miracle Whip
2 tbsp Melted butter (optional)
Season with Lawry's season salt
Red Pepper (Cayenne peppers)

Preparation
Clean salmon (discard bone and fat). Mash. Beat egg and pour over salmon.


Combine mixture of vegetables, Miracle Whip, butter and cracker crumbs, mix together so that consistency is such that patties can be formed. Season to Taste... You can fry or broil them. Bake on a non-stick pan at 350 degrees in a pre-heated oven for about 15-20 minutes, turning over and cooking for five more minutes. They are ready to serve.
