Whos to say that you are definitly going to die? The Lord can use horrible situations to glorify himself. Say the doctors are positive you will die, but you have a family of people praying for you, the Lord wanted that, and therefore may let you live and have a full recovery, and you will have a story of his miraculous mercy on your life.

God does not, but chances are that you have. If you are a Soul on the structured path, that means that you come into this life with a purpose, you will have yourself, devised a plan for this life which would have incorporated the major yardsticks you want to achieve in terms of learning, self-growth, and perhaps even achievement. You are likely to have a Spirit Guide who helps you along, to make such decisions that you achieve the main points of your plan. How you may achieve it, is still likely to leave you plenty of space to improvise, but it is quite likely that the time and the manner of your departure are also sketched out.
If you are such a Soul, then you may be praying God to help you to achieve what you really want, and would not want to change you plan say, by extending your stay over and above of what you need to get what you need as a Soul, from this life.

Assuming God has your life planned out. You will still work to make your life better. You will still try to crawl out of a smashed car that might be about to explode, etc. That won't be changing God's mind, it will be discovering that His plan was that you get out alive, or that your life become improved, in the first example. So if putting some effort is not changing God's mind, neither is praying changing God's mind. In the same way He knew in eternity past that you would crawl out of the wreck, He also knew that you would pray.
As has been mentioned, however, believing God has a plan for your life must not be confused with the fatalistic conception of 'It was meant to be'. God's plan includes your cooperation.

praying is not a way to change God's mind, it is asking Him to guide us to make a right choice. we have to pray according to His will which my be for you to die in this accident. God gives us free will to choose or it would not be free will. God is all knowing and already knows the end from the beginning. are we to pray? absolutely! Jesus prayed in the garden before His death.

gods plan is NEVER for anybody to die, since he only has good things for us and the only way to experience them is by living. but the devil doesnt want you to experience god in any way, so hes the one that will try to get you.
praying gives you strength, thats one of the reasons to pray. and this way you ascertain god is the one that takes care of your every need. gods mind is always to help you and give you good things
