Bourbon Sauce is great over bread pudding. This is my recipe for bourbon sauce. 1 cup sugar, 6 tbsps.melted butter, 1/2 cup buttermilk, 1 tbsp.bourbon(you can add more), 1/2 teaspoon baking soda, 1 tbsp.white corn syrup, 1 tsp.vanilla. Bring to boil for 1 minute. Serve over pudding. Wonderful!

My mom (retired pastry chef) always served her signature bread pudding (made with croissants) with a whiskey sauce. I'm unsure of the measurements, as she made hundreds of servings at a time. However, it was made with pure, unsalted butter, sugar and Whiskey (or rum, depending on your taste). The sugar and butter was melted over low heat, stirring constantly, making sure it didn't scorch. It was then transferred to an upright mixer and beat on low speed until the mixture became smooth and creamy. The alcohol was then added. Because the alcohol was not cooked, it still retained its effects (although only a small amount was drizzled over each slice of bread pudding). if you didn't want to use alcohol, you could add a rum flavoring to taste.

If you're searching for a recipe, find one that is very simple -- with few and PURE ingredients. For instance, the one above needs no formal measurements -- just add butter and sugar to your taste..and then add small amounts of alcohol until you find it to your liking.

I like this sauce for bread pudding

4 tablespoons butter, softened
1/2 cup sugar
1 egg, beaten
2 tablespoons whiskey, Bourbon, or brandy, or a little more


Cream butter and sugar together; blend in the beaten egg. Put mixture in top of a double boiler over gently boiling water and stir until thickened. Remove from heat and stir in whiskey, Bourbon, or brandy.

Actually, I always thought it was Rum sauce, but I don't have a clue how to make it, it's too sweet.
I like to pour milk over my warm bread pudding.

At the restaurant where I work, we use warm caramel sauce and then sprinkle powdered sugar on top. It is AMAZING.
