Personally I like to use 1 -2 day old french bread. You can also use fresh french bread..just cut into cubes and leave it sitting out over night to go stale...really soaks up the custard...makes a delicious bread pudding.

Day old croissants! I have found its equal in a few breads, but haven't found a bread pudding that's better than one made with croissants.

That's just a matter of personal taste. I like to use Brioche that's been sliced and set out over night so it will absorb the custard better. But any kind works my grandma uses plain sliced white bread and it still tastes good.

Challah works well, but we've used just plain stale white bread, and it's good, too.
