I LOVE Gyros, too! I make them like this: (I'm a Vegan...no animal products for me, but these Gyros taste wonderful)....

Ingredients:
2/3 cup textured vegetable protein (or ready made vegan beef strips)
1 1/3 cups water
Vegan beef flavoring powder
1/2 teaspoon garlic powder
1/2 teaspoon thyme powder
1/2 cup chopped onions
1 tablespoon olive oil
Dash of coriander spice
Dash of clove spice
Dash of cinnamon spice

Note: If you use the textured vegetable protein, soak in 1 cup water mixed with 1 tablespoon balsamic vinegar and a dash of rosemary spice for 1 hour before you cook with the Gyros recipe.

Heat the olive oil in a large saucepan. Add the chopped onions and cook until the onions are glossy over medium heat. Add the 1 and 1/3 cups water, all of the spices, and the Vegan beef flavoring powder. Simmer for 5 minutes until all ingredients become a broth. Add the textured vegetable protein or vegan beef strips. Stir until the textured vegetable protein or beef strips and the spice broth are completely mixed. Serve with very thiny sliced onions and tiny diced cucumbers. Serve warm wrapped in rosemary flavored whole wheat wraps or tortillas.

Good luck! I make these Gyros on Saturday afternoons when my life-mate Bill and I are watching old movies on TV and it's raining outside. These smell so great even though there are NO animal products that even our six cat babies want a bite!

Gyro-Style Pork Sandwich

Ingredients

1/4 cup olive oil
1 Tbsp. prepared mustard
1/2 cup lemon juice
2 cloves garlic, minced
1 tsp. dried oregano
1 lb. boneless pork loin, cut crosswise into thin slices, then into 5x1/2 inch strips
1 cup plain lowfat yogurt
1 cucumber, peeled and chopped
1/2 tsp. garlic, crushed
1/2 tsp. dill
2 pita loaves, halved
1 small red onion\raw, peeled and thinly sliced



Instructions

Combine first 5 ingredients in a bowl. Place pork slices in a shallow dish and pour marinade over. Cover and marinate in refrigerator 1-8 hours. Combine yogurt, cucumber, crushed garlic and dill in another bowl. Cover and refrigerate.

Preheat oven to temperature 450°F. Drain marinade from pork slices and place pork in a single layer in a shallow pan. Roast about 10 minutes, until crisp. Open each pita half to form a pocket. Distribute pork among each half. Top each sandwich with some chilled yogurt mixture and sliced onions.

They sell Gyro kits at most supermarkets. Not quite as good as the real thing from a Greek restaurant but close enough in a pinch.

Garlic Lemon chicken Gyros
1/2 tsp. Garlic Lemon Seasoning Mix
1/2 cup diced peeled cucumber
1 small tomato, diced
1/4 purple onion, finely diced
Balsamic vinegar to taste
2 cups shredded or diced Garlic Lemon Chicken
1/2 cup crumbled feta cheese
6-8 pieces pita bread

Combine diced vegetables, Garlic Lemon Seasoning, and balsamic vinegar in a small bowl; stir well.

Spoon chicken, vegetable mixture, and cheese into warm pita pockets and serve immediately.

PORK GYROS WITH YOGURT-TOMATO SAUCE, RED ONION, AND ARUGULA

Juicy pork replaces the traditional lamb in these sandwiches. Tomato and capers are a lively addition to the yogurt sauce.

Pork
1/4 cup extra-virgin olive oil
1/4 cup dry red wine
3 garlic cloves, minced
1 small bay leaf, crumbled
1/2 tablespoon (packed) fresh oregano leaves
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 1-pound pork tenderloins

Sauce
1 1/2 cups plain Greek yogurt or whole-milk yogurt
2 tablespoons chopped seeded tomato
2 tablespoons chopped fresh dill
2 tablespoons drained capers, chopped
2 garlic cloves, minced
1 tablespoon tomato paste
1 tablespoon red wine vinegar

6 7-inch-diameter pita breads
1 red onion, halved, thinly sliced
24 large arugula leaves

For pork:
Combine first 7 ingredients in large resealable plastic bag; shake to blend. Add pork to marinade; seal bag. Chill overnight, turning bag occasionally.

For sauce:
Stir first 7 ingredients in medium bowl to blend. Season sauce to taste with salt and pepper. Cover and chill until ready to use, up to 1 day.

Prepare barbecue (medium heat). Remove pork from bag. Grill until thermometer inserted into center of each tenderloin registers 145°F, about 18 minutes. Transfer to work surface; let stand 10 minutes (temperature will rise 5 to 10 degrees). Thinly slice into rounds.

Grill pitas until warmed through and softened, about 2 minutes per side. Cut pitas in half. Fill pita halves with pork, drizzle with sauce, then tuck in onion and arugula. Serve, passing remaining sauce separately.

Makes 12.

Yes. You can buy the meat frozen. Get the pita wraps. Use some cucumber and dill sauce. :)
