Ok...

I can use any of the following from my DVD:
S-Video, Component Video(Red, Green, Blue), Composite Video (Red,White,Yellow)

I can input to the following on the projector:
S-Video, VGA, Composite Video (Red,White,Yellow)

I need to get the signal down a 10m cable... I was about to buy an RGB to VGA cable thinking that would be the best one...

What do you think?

Oh I could also output on scart of course from the DVD...

Component (Red Blue Green) And put DVD player on Progressive scan. If you used RGB to VGA it is only as good the RGB which is the Component cables.
Save the VGA for if you want to connect a PC.

The best output option you have on your DVD is the Component Video but since that is not an option for your projector the best you can do is go with the s-video.

I would use S-Video purely for ease, just make sure the cable is well screened so doesn't get interference. It's a myth that different cables formats carry a different quality signal, they are after all only cables carrying a signal in a slightly different format.

if you are going from one format to another make sure it's a purpose built cable rather than a converter with additional connections.

It all depends on the compatability and quality of the connections and leads etc. I would suggest probably the scart lead but if you are not happy with the picture quality, try the other methods and chose.

I'd go composite in this case, based on own experience with similar setup. New projector I'm planning on getting must have component though....

well, S-Video gives you better detail in your display which would be much better since it will be a much larger viewing area and you're gonna want as much detail as possible. If not, I suggest the regular Composite video - you can't go wrong with it.
