"Easy cook rice" (like Minute Rice) is white rice that's been precooked and dehydrated so that it cooks quickly. White instant rice cooks in about five minutes.
Converted rice (like Uncle Ben's) is also called parboiled rice. Converted rice is steamed before it's husked, a process that causes the grains to absorb many of the nutrients from the husk. When cooked, the grains are more nutritious, firmer, and less clingy than white rice grains.
Cooking rice outside of a steamer or rice cooker is a very delicate undertaking...to get it just right. Try an inexpensive rice cooker/vegetable steamer if you still have trouble after practice...or continue to buy Minute Rice -- it's quick and easy!

Easy cook rice is already partially cooked I think.
The easy way to cook say Basmati rice is to wash it well with cold water in a sieve. Allow it to drain , then put in a large microwaveable bowl ( plastic or pyrex glass ), add a little salt and 2-3 bay leaves, then add twice the volume of boiling water. Microwave at full for 10 minutes, check with a fork to see if its done and add a little more boiling water if its not ( microwave for a further 3 minutes ),
This should give you a good non stick rice without paying extra for easy-cook.

because when you cook your own rice the starch in the rice causes it to stick together. Try rinsing the rice before you cook it, that will rinse away the extra starch. Also minute or easy rice is par-boiled and pre cooked, so again the starch is taken out.

It's the amount of water and type of rice. In the easy rice, it tells you exactly how much water to use for that grain type.
