You have no idea how many bags of shredded cheese are in my freezer right now. I buy blocks and shred them myself. (Cheaper that way) Cheddar, mozz, Swiss, manchego, Parm, asiago, Romano. It's always available on demand in labeled ziplocks.

Cheeses like feta, brie, bleu, gorgonzola, they don't freeze well because those are soft cheeses.

I have frozen goat cheese and fresh mozzarella. But other cheese don't do so well in the freezer. Hard cheeses keep for quite a long time in the refridgerator and if they get mold spots on them just cut them off and use what's left.

I found some useful info at the american cheese society webpage.

Yes, some can. Not the soft ones though.
I've frozen cheddar cheese many times. The only drawback is when it's thawed it will tend to be a little more crumbly, the flavor is not affected in any way though.

Sure. but some types of cheese can get crumbly after freezing but, the flavor is still good and if you are going to use it in a recipe where it will be melted it's fine.
Rubbery cheeses, like mozzarella, freeze very well.

yes, I freeze shredded cheese all the time. It goes best in a recipe like macaroni pie or the topping on a potato

Yes, just wrap it tight so that the cheese would dry to much.
