Posole! It's a Mexican soup. Get an awesome and incredibly easy recipe from marthastewart.com. Just search "chicken posole recipe". The garnishes really make this dish. I also add a squeeze of lime.

i love a nice casserole of home-made macaroni and cheese! (NO! i don't have the blue-box blues...Mac and cheese is SO MUCH BETTER when made from scratch... use rotini (corkscrew pasta) or radiatore (look for it) or farfalle (bow-ties)
...wagon-wheel pasta is good in this too...you can also jazz it up, by using your favorite varieties of cheese....real cheddar, pepper-jack, and mozzarella is one of my favorite combinations...add other things, too....cook up some italian sausage without the skin and stir it in before you put it in your casserole dish...or dice up some hot dogs...or use chicken strips (NOT BREADED!)
this is the perfect dish to use your imagination on...because you can never make it wrong (unless you make a combination that no one in your family likes)

I love chili served on top of chips and topped
with cheese. In my neck of the woods this dish is called a "gut buster". Sure sits well on the tummy
and is very yummy. lol

I love home-made chicken stew with dumplings. It is best with loads of chunky veggies, gently braised until everything is tender, then serve with crusty bread to mop up the juices
