My cookie always turn soft after cool down... please help...

Try real butter instead of shortening or oil. Cook them a little longer but not too long.

Oh, and don't put them in tupperware or anything, that retains moisture and will make them soft.

RICE CRISPY COOKIES

1 c. brown sugar
1 c. white sugar
1 c. shortening
2 eggs

Cream. Add: 1 1/4 tsp. vanilla 1 1/4 tsp. soda 2 c. oatmeal 2 c. rice crispies

Make into rolls. Refrigerate. When cold, cut and bake at 350 degrees about 15 minutes. Makes about 80 cookies.

Butter makes a crispy cookie, shortening makes a softer cookie, so use the real butter only if you want crispy cookies. Don't use butter flavored shortening. You should also use a rack as opposed to putting your cookies on paper to cool. More airflow will dry them out better.

One of three things might be happening:

1) you may need to let the cookies cool down longer before attempting to take them off the cookie sheet.
2) you may need to cook them longer. The directions on the cookie label need to be adjusted, depending on how high (elevation) you live at, whether or not you preheat your oven and how long, and how high your cookie sheet is sitting in your oven. Experiment.
3) If you're using self-made batter, you might be whipping the ingredients together too long.

give them a day the first ones are always soft and flexible at first and don't put bread near them that makes them soft too.
