I hate custard so ditch that. Love cream. But I think I'm in the minority with that opinion.

How about reducing the proposion of Custard & Cream by 50% each?

That is tricky!!
I think you should make 1/2 the amount of each and have a thinner layer or each.
Failing that i think it would have to be the custard the gets booted. You can't go wrong with sponge fruit and cream!!

I would get rid of the cream, you can use the custard for the top too or if you don't have enough to top it then it's really no big deal because it is just garnish anyway. Yummmm

The cream, definitely - you can add more jam to the sponge (and maybe a drop more sherry, if it's for grownups) and decrate with hundreds and thousands for children or fruit slices/chocolate flakes or whatever you have to hand. And think of the calories you'll save!
