It's a nut - like a peanut, only it tastes different. To me, it's kind of creamy and buttery tasting. They are grown primarily in the Middle East and India, I believe. They're pretty good - especially when covered with chocolate.

A tropical American tree (Anacardium occidentale), naturalized in all warm countries, and important chiefly for its nut, but yielding also a gum.
Cashew apple: the pear shaped edible receptacle on which the cashew nut is borne.
Cashew nut: the kidney shaped fruit of the cashew borne at the apex of a fleshy receptacle and rendered edible by expelling the caustic oil from the shell by roasting.

It's a nut that is formed at the end of a semi-sweet yellow colored fruit. When you pick the fruit, you take the nut off of the end. Processing the cashew is a little difficult, because the outer skin has to be burned off--it has toxic oil. I have a very large cashew tree outside my house, and we harvest every season.

The Cashew (Anacardium occidentale) is a tree in the flowering plant family Anacardiaceae. The plant is native to northeastern Brazil, where it is called by its Portuguese name Caju (the fruit) or Cajueiro (the tree). It is now widely grown in tropical climates for its cashew "nuts" (see below) and cashew apples.

cashew is false fruit. it grows in a tree, native from in the northeast of brazil, and grows in tropical climates. the cashew is called a false fruit because the part that looks like a fruit develops from the receptacle of the cashew flower. the true fruit of the cashew tree is a roughly kidney-shaped or boxing-glove shaped drupe that grows at the end of the pseudofruit. actually, the drupe develops first on the tree, and then the peduncle expands into the pseudofruit. within the true fruit is a single seed, the cashew nut.

the juice is delicious, one of my favorites.
