When people have said "God doesn't exist because there is no evidence," someone replied "Can you prove the Flying Spaghetti Monster doesn't exist, just because there is no evidence?"

It is part of a logical argument - does lack of evidence mean something does not exist? Bearing in mind that lack of evidence could merely mean a lack of knowledge - 1,000 years ago we could not prove that light travelled so then it could be argued that it didn't.

How about explaining to us all what the heck is the flying spaghetti monster? I've seen many people ask you and others, but never get a response. Is that polite? They took the time to give you an answer, however where is the reciprocation?

Without proper introduction, parody and satire are often accepted as truth. So remember, Mark Twain asserted that fiction writers are held to much higher standard of truth than the news media, theologians, politicians and many other serious authors of so-called truth. Some people just don't have a sense of humor, and sadly, humor is one of the best ways to convey serious, or tragic news/facts. I work in a real noodle factory. But even there, I feel compelled to prove that there is really no such corporate entity, it is fictitious. You have no idea how close to the truth you come, when you speak of pasta as a sacrament. In the end, their is only you and I, working together, or fighting apart. And sometimes, I wonder if you are real...

The concept is a parody of the Christian God; you can't really "disprove" it. If someone claims they have evidence that it doesn't exist, you always have room to say, "Well, the Flying Spaghetti Monster tampered with the evidence and made it APPEAR that he doesn't exist!" or "The FSM is just trying to test your faith!" It's a parody, and an accurate one at that.
