Fried Summer Squash
INGREDIENTS:
4 eggs, beaten
3/4 cup milk
1 1/4 teaspoons salt
7 medium summer squash, thinly sliced
2 1/2 cups flour
oil
PREPARATION:
Combine eggs, milk, and salt. Dip squash in the egg batter, then roll in flour until well coated. Fry in deep hot fat, about 360°, until golden brown.

Blue Cheese Dip Recipe

INGREDIENTS:
2 cups sour cream, 16 ounces
1 1/2 cups mayonnaise
1/2 teaspoon salt
1/4 teaspoon white pepper
4 ounces crumbled blue cheese
PREPARATION:
Combine sour cream, mayonnaise, salt and white pepper; stir well. Add blue cheese; stir gently. Chill blue cheese dip for at least 1 hour. Serve with assorted vegetables, crackers, or as a topping for baked potatoes.
Makes about 3 1/2 cups of blue cheese dip.

Mothernyte's Fried Squash...

Slice yellow squash in thin slices....dip the squash in eggs that have been beaten....fry squash for about three minutes on each side...salt and peppering them...some people dip them in egg and then flour but the flour to me makes more batter than I care for.

Keep any recipe simple and it works better for me, hopfuly this will be of some help to you..
