try this one too, line a large pot with tin foil (saves on cleaning after you are through) place the roast in the pot with small quartered potatoes and onions, add baby carrotts, then add a can of "cream of chicken" and a can of "cream of mushroom" soup, (if you like you may also add sliced mushrooms or portabello mushrooms) salt and pepper to taste garlic to taste AND then quarter two WHOLE small oranges and place them around the roast to take out the wildness and to tenderize too (after cooking take these out and dispose of them) cook slow and turn twice and baste with the juices around the meat.
(I am leaving the time up to you as you will be able to tell when the meat is done to your liking)

Here are a couple of easy things that are really good.

Marinade in a mixture of Ranch dressing and Worchester sauce...mixed half and half....mix enough to completley cover the roast.....also add a little liquid smoke...I usually add about 1/8 to 1/4 cup...depending on how big the roast is....you can also add any spices that you like...I use garlic, seasoned pepper...
Let the meat soak for about 24 hours...and then slow cook on the grill or bake in the oven like usual...

another thing you can do, is inject the meat will a little garlic butter and the use a dry mear rub around the outside....just buy a rub that looks good to you....

This is a great easy recipe !! First remove as much fat as you can...that gets rid of the gamey taste. Flour it lightly and brown it really good in a little oil. Put it in a slow cooker and add a large can of tomatoe juice, a bottle of barbeque sauce ( your favorite flavor) and a packet of dry onion soup mix. Let this cook slowly for several hours.....add water as needed......It's terrific !!!! If you're in a hurry, you can skip the browning, it's still good !!!

Have you done it with just 10-12 juniper berries poked into the meat (or tied up in a bag, to be removed later, if doing it in a crock pot)? The juniper really changes the flavor... it makes it
more pronounced, yet not in a gamey way.
Good luck!

There is a rub I found somewhere called Dynomite dust.

CAYENNE
BASIL
OREGANO
MARJORAM
BLACK PEPPER
THYME

MIX IT ALL UP AND RUB IT ALL OVER THE ROAST.
