I am going to my In-Laws for dinner and I want to bring a dessert. Any good recipes or suggestions? Thanks to everyone who answer!

Really,
Maybe either a pumpkin cheesecake pie or a chocolate eclair cake...both are AMAZING!!! And easy!!!
Chocolate Eclair Cake

4 large eggs
1/2 cup butter
1 cup water
1 cup all-purpose flour
1 (8-ounce) package cream cheese, softened
4 cups milk
3 (3-ounce) packages instant vanilla pudding mix
1 (16-ounce) container whipped topping

Easy Chocolate Icing (recipe follows)
Preheat oven to 400*F (205*C). Grease a 9 x 13 x 2-inch baking pan. Set aside.
Whisk eggs in a small bowl and set aside.
In 2-quart saucepan, melt butter in water. Add flour and cook, stirring constantly, until mixture forms a ball. Remove from heat and beat in eggs all at one time, continue beating until smooth.
Spread in prepared pan and bake for 35 to 40 minutes. Allow to cool.
Combine cream cheese and milk, beating until smooth. Add pudding, one package at a time. Spoon over cooled shell. Spread with whipped topping and drizzle with Easy Chocolate Icing.
Chill at least one hour before serving.
Makes 12 servings.

Easy Chocolate Icing

3 tablespoons baking cocoa
1 cup powdered sugar
1 tablespoon, plus 1 teaspoon butter, melted
About 2 tablespoons water
In small bowl combine cocoa and powdered sugar, mixing well.
Add butter and water and beat until smooth, adding a small amount of water, if needed, until the consistency is right to drizzle icing onto cake.

Cheesecake Double Layer Pumpkin Pie
I use a shortbread premade crust...better than the G. Cracker crust:)
2 pkg. (8 oz. each) PHILADELPHIA Fat Free Cream Cheese, softened
1/2 cup sugar
1/2 tsp. vanilla
2 eggs
1/2 cup canned pumpkin
1/4 tsp. ground cinnamon
Dash ground nutmeg
1/3 cup HONEY MAID Graham Cracker Crumbs
1/2 cup thawed COOL WHIP FREE Whipped Topping



MIX cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended. Do not overbeat after adding eggs. Remove 1 cup batter; stir in pumpkin and spices. Spray 9-inch pie plate with cooking spray; sprinkle bottom with crumbs.
POUR remaining plain batter into crust. Top with pumpkin batter.
BAKE at 325°F for 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Top each serving with 1 Tbsp. of the whipped topping.

Bring 4 pints of different flavors of Haagen Dazs Ice cream.

You can't go wrong with that. If there are other desserts and there is a lot of ice cream left over, your inlaws can freeze it and pig out on it later. It also gives everyone a chance to try a little bit of each flavor and maybe find something new they like.

I cook sooooo much, but what happens if you work for hours on a dessert, and it doesn't turn out right? There are much more useful and less stressful ways to spend your time before the dinner....

I make a very easy and light dessert called "Angel Lush".....

Take an Angel Food Cake and slice through to make three layers, set layers aside.
Then mix 1 large box of Vanilla Pudding with 1 can crushed Pineapple and 1 1/2 cups cool whip.
Place the bottom layer on a cake plate and spread some of the filling on it, place the next layer on top and continue with the filling.
I then take a couple fresh strawberries slice them in half and place in the filling on top for decoration.
This is a very good dessert, and can be made virtually fat free if you use the lighter version of pudding and coolwhip.

try taking a can of sliced pineapple and spray cake pan that has been lined with wax paper lay the rings in the bottom filling the pan in the center of each ring put a cherry and cover the pineapple about 1/4 inch of brown suger....to this add a box of lemon cake mix or can use white or yellow......bake as direction but allow about 8 more minutes feel the center if it is firm and springs back.....now when a little cool place a dish that it will fit on and invert...i find running a knife around the edges is a good thing.....peel the paper off and ala pineapple upside down cake....oh yeah i soak my pineapple in brandy for 1/2 day but that is opt

I love this recipe.

Coconut Caramel Pie
Prep: 30 minutes
Freeze: Overnight
Stand: 20 minutes

17 oz package flake coconut
½ C chopped pecans
¼ C butter or margarine
18 oz package cream cheese softened
114 oz can of sweetened condensed milk
3 C whipping cream
29-inch prepared pie crusts
1 12 oz jar caramel ice cream topping

STEP 1
In a large skillet cook and stir coconut and pecans in hot butter over medium-high heat about 5 minutes until coconut is golden brown. Spread mixture on foil and let cool.

STEP 2
In a large mixing bowl beat cream cheese and sweetened condensed milk with an electric mixer on medium speed until smooth; set aside.

STEP 3
In a chilled, large bowl beat whipping cream with an electric mixer on high speed until soft peaks form. Fold into cream cheese mixture.

STEP 4
Place half of the cream cheese mixture in each pie shell. (Note: If using a ready-made graham cracker or chocolate wafer pie shells in foilware pans, some of the filling will not fit.) Top each pie with half of the caramel topping. Sprinkle half of the cooked coconut mixture over each pie. Cover and freeze pies overnight.

STEP 5
Remove pie from freezer and let stand 20 minutes before serving. Makes 2 pies (10 servings each).

Buy something at the store. Something nice of course. Put it this way....The very fact that you're asking says you don't know on your own. And it says you care about what to bring. So why make something that you've never tried before, and then risk a mistake and have nothing or something that's terrible? Practice on your own befor bringing a dish to a family dinner. Now go to the store and you will find many choices of proven desserts.

I vote for this pie - It's seasonal, tasty, and everyone will appreciate your time and thoughtfulness!

Classic Pumpkin Pecan Pie
INGREDIENTS:
3 eggs, divided
1 cup canned solid pack pumpkin
1 cup sugar, divided
1/2 ts ground cinnamon
1/4 ts ground ginger
1/8 ts ground cloves
2/3 cup karo light or dark syrup
2 tb butter, melted
1 ts vanilla
1 cup coarsely chopped pecans
1 prepared deep dish pie crust*
PREPARATION:
Preheat oven to 350.
*If using a frozen pie crust, do not thaw; preheat a baking sheet in the oven and place the pie on the cookie sheet to bake.

In small bowl, combine one egg, pumpkin, 1/3 cup sugar, cinnamon, ginger and cloves.

Spread in pie crust.
In medium bowl, beat remaining two eggs, slightly. Stir in corn syrup and remaining 2/3 cup sugar, the butter and vanilla; stir until well blended. Stir in pecans. Carefully spoon over pumpkin mixture.

Bake 50 to 60 minutes or until filling is set around edge. Cool pie completely on wire rack.

Dump cake
dump on can crushed pineapple in a 9 x 13 pan
dump one can cherry pie filling on top of that
dump one package yellow or butter cake mix on top of that
sprinkle 1/2 cup chopped pecans or walnuts on top of that
dot with 1 stick of butter (get real butter) chopped into pieces.
I can't remember how long or what temp to bake it at but look online.
Serve warm with vanilla icecream.

If they don't like sweets (one of mine doesn't), bring good cheese and sliced fruit (like apples or pears) and grapes.
