This depends on the size of the Hospital and the type of the Hospital.

Food is prepared in a diet kitchen.

Usually two types of food are prepared. Restrictive and non restrictive.

Dietitian prepares a card for each patient for each meal, the kitchen prepares the food and distributes it per card to the clients.

Food is made or cooked in large stainless steel steam kettles.

When hospital cafeteria or restaurant is the part of the kitchen then non restrictive dishes are served to both the clientele.

Every thing has to have batter standard of cleanliness .

Each hospital has to have a dietitian. Calorific value of food, vitamins, carbohydrates, protein content etc are actively looked in to. all cooking is done on a mechanised line. If you had indicated your intention in asking the question, a more complete answer was possible.
