Im cooking a vegetarian meal but have run out of inspiration for what to cook. Any ideas for an interesting main meal which has brown rice in it?

I have to share this recipe with you, it is very easy, very fast and sooo delicious. In fact, my boyfriend (who is a total meat eater) loves it and is always asking me for it. It is his favorite dish that I make. It is also vegan (no dairy). If I ever entertain company I plan to make it. You can serve it over any rice you choose. It is easily doubled.

Thai Tempeh:

2 teaspoons peanut oil (or vegetable oil)

1 8 ounce package tempeh

1/2 cup vegetable stock or broth

1 teaspoon tamari or soy sauce

2 cloves garlic, minced (I always use more)

1-2 serrano pepper or jalapeno chiles, minced (seeded and deveined, unless you like alot of extreme heat!)

1 teaspoon grated ginger (I also add more of this)

1 can unsweetened coconut milk

2 scallions, sliced thin (I use more)

1/2 teaspoon salt

1 teaspoon fresh lime juice

4 tablespoons chopped fresh cilantro or parsley

1/2 teaspoon of cornstarch mixed with cold water


In a large deep skillet, brown tempeh on both sides in oil.

Cut tempeh into thin strips or cubes

Add stock, tamari/soy sauce, garlic, minced chile pepper, and ginger to the skillet and bring to a simmer.

Add tempeh, cover the pan and cook until all the liquid has been absorbed.

Add the coconut milk, and scallions, and season with salt, and simmer for several minutes or until hot.

Add the water/cornstarch mixture.

Stir in lime juice and sprinkle cilantro/parsley over the dish.

Serve hot, over rice, garnish plate with parsley and an extra lime slice.


NOTE: Tempeh is a fermented soy product. I know that sounds gross, but it is really good fried and cooked. Your vegetarian friend will like it. When you open the package, you will notice little black dots all over the tempeh. This is completely normal, so don't worry about it.

This dal will go great with brown rice.

* 2 cups red lentils
* 1 large onion, diced
* 1 tablespoon vegetable oil
* 2 tablespoons curry paste
* 1 tablespoon curry powder
* 1 teaspoon ground turmeric
* 1 teaspoon ground cumin
* 1 teaspoon chili powder
* 1 teaspoon salt
* 1 teaspoon white sugar
* 1 teaspoon minced garlic
* 1 teaspoon ginger root, minced
* 1 (14.25 ounce) can tomato puree

Wash the lentils in cold water until the water runs clear (this is very important or the lentils will get "scummy"), put the lentils in a pot with water to cover and simmer covered until lentils tender (add more water if necessary). While the lentils are cooking: In a large skillet or saucepan, caramelize the onions in vegetable oil.. While the onions are cooking, combine the curry paste, curry powder, turmeric, cumin, chili powder, salt, sugar, garlic, and ginger in a mixing bowl. Mix well. When the onions are cooked, add the curry mixture to the onions and cook over a high heat stirring constantly for 1 to 2 minutes.. Stir in the tomato puree and reduce heat, allow the curry base to simmer until the lentils are ready.. When the lentils are tender drain them briefly (they should have absorbed most of the water but you don't want the curry to be too sloppy). Mix the curry base into the lentils and serve immediately.

why not do a stir fry with the brown rice. Stir fry any vegetables perhaps some baby sweetcorn, courgette, carrot etc with onion and garlic. Add some chopped chillis (or use tabasco sauce if needed!). If you fancy using tofu then fry that first before the veg on a very high heat to try and get it as crispy and brown as poss. Then I add some chopped tomatoes with skins on, mixed herbs and any flavours like soy sauce, sweet chilli sauce, tomato juice. It's very quick to do and goes with brown rice.

Failing that you can make a nut roast to go with brown rice and dress with a home made salsa for some moisture (tomato and onion).

Have you tried the vegetarian websites? Worth a shot for recipes or even bbc.co.uk have good recipes.

Each number a different dish!
1.Cottage Cheese with rice and a few sliced tomatos on toast as a side dish.
2. Cabbage Rolls (contents rich and Mushrooms)
3. steamed rice with Jalepenos.
4. Broccoli with Cheese on rice!
5. Brown rice in bread pudding!
6. Chop Suey with mushrooms (no meat)
serve on steamed rice!
7. Veggy Fake Meat Loaf: Cereal, Soya sauce
mixed in Canada Pumpkin and cook in a pan if
you want something that looks like meat loaf
Slice and serve with steamed rice or else mix with the rice.

Chickpeas served with brown rice. This is quick and so easy.

1 medium onion, chopped
2-3 colves garlic, minced
1 courgette, chopped
1 (400g) tin crushed tomatoes
1 (400g) tin chickpeas, drained and rinced
1 tsp ground cumin
1 tsp pepper

-Lightly brown the onions and garlic.
-Lower heat to medium and add courgette (can add any other veg you like also. Peppers would be good)
- Stir for 5 mins or so and add rest of ingredients.
- Simmer for about 8 mins and voila!
Serve with the rice.

Just make a stir fry with lots of different veg in it: peppers, onions, mushrooms, baby corn and add a bit of soy sauce.
Boil the rice the night before, cool and then put it into a plastic box in the fridge.
When you're ready for the rice, fry it off in a little oil with an egg, to make perfect egg fried rice.
If he/she doesn't eat eggs, just leave them out.

What about a risotto using brown Rice and lots of your favourite veg, or a stir fry, or brown rice milk pudding ?.

can you have eggs
oriental rice
300g/10oz brown rice
2 eggs beaten
2 onions peeled and finely choped
2 garlic cloves peeled and finely choped
3 tbsp olvie oil
soya sauce
pinch of each nutmeg and ginger
salt

heat oil in frying pan add onoins and garlic and cook for 5 mins
stir in remaning ingerdients heat thorough thoroughly and serve

You could stuff large field mushrooms with rice/herbs/cheese then bake in the oven..
A fave veggie main dish of mine is veg lasagne, made with courgette/onion/leek/mush with fresh sheet egg pasta and homemade sauce.

I prefer both fruits and fresh vegetables better, however they look and taste. You desire a little of both.
