I thought pannini meant covered in bread crumbs. Might be wrong, but it would be difficult to bread crumb steak and onion. Otherwise it means a cream sauce, which doesn't seem right to me.
Ham and Swiss cheese sounds fine - as long as you're not Jewish or Muslim. Cooked cheese is a cold weather dish. Raclette, Cheese fondue? Not something the Swiss eat in summer.

Why not have steak and onion with swiss cheese?
If You have to really pick one only go for Ham & Swiss Cheese maybe with onions or gerkins?
