Okay, my husband went grocery shopping and brought home two packages of 'fake' lobster (actually some kind of fish formed into pieces) Anyone have a good recipe to use this?

Geez, thanks Ricardo just when I've worked myself up to a point where I thought maybe it wouldn't be so bad LOL

I've never seen or heard of fake lobster, but I assume that it would be like "fake" crab. I'd make a lobster salad with them. I've cooked lots of lobster in my time, but only use cold lobster in lobster salad. Just cut in chunks and add a bit of chopped celery and mayo for a New England tradition.

My daughter and I love this with crackers as a snack.
Lobster Salad
2 tbsp mayonaise (add more if you like)
1 celery rib chopped into small pieces
1/2 onion chopped into small pieces or 2 green onions sliced
salt&pepper to taste
2 small packages of imitation lobster or crab meat cut into chunks and flaked with fork.
Mix all ingredients together and serve with crackers.

I agree with Laura. Toss whatever your preference is in the salad but I like to add some spice to the mayo dressing--red pepper flakes, salsa, chopped red peppers, a little garlic--experiment! Don't worry about measuring. I always go by taste. Have fun with it! That's the fun of cooking.

Does it mean that it's already cooked? In which case, I'd also suggest a nice salad - if you eat legumes, a nice one would be with boiled chickpeas, celery, chili and onion. Or you could use it for a pasta sauce - but in this case the best result is obtained by using frozen lobster meat.

I don't care for it too much but can be mixed into a seafood spread like you find in the grocery stores (mayo, celery & spices)& spread on a split croussant. It's a quick & cheap dinner and tastes pretty good that way.

It's OK for any recipe you would use lobster for. Ricardo was pretty extreme-I wouldn't call pollock disgusting, though I like it better not made into surimi. Not all of us can afford real lobster, buddy.

"I Can't Believe It's Not Lobster" Spread
2 pks. cream cheese, softened
1 bottle cocktail sauce
1 cup or more chopped 'lobster'
Assorted crackers or toasted cocktail rye bread
Spread the cream cheese evenly in a pretty serving dish. Pour a generous amount of cocktail sauce over the cream cheese, sprinkle with the lobster pieces, and chill. Serve with crackers.
Can also add chunks of crabmeat (real or fake) and shrimp for seafood spread.
***********************************
Lobster Canapes
1 pk. cocktail rye bread
1 pk. cream cheese
1 cup minced lobster
Onion and garlic salt to taste
Dash of Worchestershire sauce
Lightly toast one side of the rye bread. Combine cream cheese, lobster, and seasonings. If the cream cheese mixture is not thick enough to hold its shape when mounded onto the bread, add more lobster.
Mound cream cheese mix onto untoasted side of bread. Broil until mixture is bubbly and barely starting to brown. (Watch carefully as it tends to burn.)
This also works well with minced crabmeat -- again, real or fake.
