Asparagus & crabmeat salad
Ingredients

1 c Mayonnaise
4 lg Boston lettuce leaves - or butter lettuce leaves
1 tb Lemon juice - fresh
1 ½ ts Tomato paste
1 ½ ts Shallot - minced
½ ts Dijon mustard
¼ ts Pepper
1 lb Asparagus - trimmed
8 oz Crabmeat - cooked

Directions

Whisk mayonnaise, lemon juice, tomato paste, shallot, Dijon mustard and pepper in medium bowl. Cover and refrigerate until ready to use. (Can be prepared 3 days ahead.) Cook asparagus in large pot of boiling salted water until crisp-tender, about 4 minutes. Transfer to bowl of ice water and cool. Drain and pat dry. mix crabmeat into mayonnaise. Season to taste with salt. Arrange 1 lettuce leaf on each plate. Top with asparagus. Spoon crabmeat mayonnaise over and serve. Bon Appetit, April, 1991.

Baked Eggs with Crabmeat
Ingredients

8 oz Crabmeat, canned or frozen
8 Eggs
1/2 c Milk
Salt and pepper to taste
Directions

Pick over the crabmeat and remove all the stiff membranes. Beat the eggs slightly with a wire whisk, add milk and seasonings, and beat a little more. Stir in the crabmeat and pour into individual buttered casseroles. Cover and bake in a medium oven (350 degrees F) 30 minutes. Serves four.

Crab Salad

it goes good with a fish dinner

Romaine lettuce, broken up in a bowl, NOT chopped, or sliced, use you hands
cold left over crab meat, shredded
2 green onions, sliced thinly on the angle
shredded carrots, about 1/2 of one
1/4 cup parmesean cheese
Creamy salad dressing, like ranch, or bleu cheese
You can add some fresh bacon bits as well, if you like.

Btw, the letter B key is NO WHERE near the letter P key, at least on my keyboard, so the chance of a typo is out of the question!
Maybe he'll make one of our recipes and think it's crap?

VA. BEACH SHE CRAB SOUP........thake 1/2 stick of butter and add flour while cooking in a pot to you get a nice paste.....to this add 3 green onion bottoms choped very fine (go about half way up the green onion.save the tops.....now add 1 qt of half and half milk... bring almost to a boil and 1 lb of crab meat simmer now add 2 tbsp of old bay seasoning (if you cant get can use cajun spice....add 1/2 cup sherry (optional) salt and white pepper to taste... cook until the soup thickens and garnish with some diced pimentos and slithers of green onion

CRAB CAKES:

Stir together gently: crab meat, breadcrumb, egg, mayonaise. Shape into golf ball sized balls, flatten a bit. Fry in oil until golden. Serve warm with tartar sauce, or mayo and mustard mixed. And a Sam Adams. Close your eyes you are on the Chesapeake.

Add oil and garlic into wok. At the same time stir fried some scrambled eggs. Throw in some chives, leftover rice and crab meat. Stir fry them with high heat and add in some light soya sauce and pepper. Serve hot. Delicious

ok it goes like this...drain crabmeat,mix breadcrumbs with parsley and old bay seasoning(for those not on the east coast this product may b hard 2 find) , now mix 1 egg per cup of mayo,and a lil worchestershire and mustard 2 taste,mix the crab into the breadcrumbs,then pour on your wet ingredients. viola!!! crabcakes!!! bake until golden brown peaks on top.

Crab Meat Dumplings

6 ounces of canned crab meat, finely chopped
Two (3 oz.) pkgs. cream cheese, softened
1/2 teaspoon of salt
1/4 teaspoon of garlic powder
1/4 teaspoon of tarragon
40 wonton skins
1 egg, slightly beaten
Vegetable oil

Mix chopped crab meat, cream cheese, salt, garlic powder and tarragon. Brush wonton skin with egg. Place heaping teaspoonful of crab meat mixture in center of wonton skin. (Cover remaining skins with dampened towel to keep them pliable.) Top with another wonton skin; press edges to seal. Brush dab of egg on center of each side of puff. Make a pleat on each edge, pressing to seal. Repeat with remaining wonton skins. (Cover dumplings with dampened towel or plastic wrap to keep them from drying out.) Heat vegetable oil in wok or deep frying pan to 350ºF. Fry 4 to 5 dumplings at a time until golden brown, turning 2 or 3 times about 2 minutes. Drain on paper towel. Serve with plum sauce. Makes 20 appetizers.

I heard Curry was invented because the meat had gone off and they wanted to disguise the taste? so curry???

make small parcels in puff pastry, bake and dip in sauce: combination of mayo, ketchup and mustard ( a little cognac optional).
