Cheese Scalloped Potatoes

Episode: Easter

Prep Time: 10 minutes
Cook Time: 50 minutes
Yield: 4 servings

1/4 cup chopped onion
2 tablespoons butter
2 tablespoons flour
1 1/4 cups milk
1 cup grated Cheddar cheese
Salt and pepper
3 potatoes, peeled and thinly sliced, not rinsed

Preheat oven to 350 degrees F. Cook onion in butter until soft, add flour and cook for 2 minutes, whisking. Whisk in milk and cook until thick and bubbly. Remove from heat and add 3/4 cup of cheese, stirring until melted; season with salt and pepper. Layer half of potatoes in a baking dish and sprinkle with salt and pepper. Cover with half of sauce. Layer remaining potato slices on top of sauce and season. Top with remaining sauce and sprinkle with remaining cheese. Bake, covered, for 30 minutes or until potatoes are tender.

Scalloped Potatoes Recipe #26470

2¾ hours 1¼ hours prep
8 medium potatoes, peeled
1 medium onion, chopped
1 lb bacon
1 cup sour cream
1 can cream of mushroom soup
salt and pepper
1 1/2 cups shredded cheddar cheese

Fry bacon until crisp and drain well on paper towels.
Discard all but 1T bacon grease; saute onions in bacon grease and drain well Slice potatoes thinly.
Butter a 13x9 casserole dish; layer potatoes, bacon, onion mixture and finish with more potatoes.
Mix sour cream, cheese, and mushroom soup; pour mixture over top of potatoes.
Cover with foil; bake at 350 degrees for 1 to 1 1/2 hours; uncover for the last 20 minutes.

SCALLOPED POTATOES
1 cup milk
1 cup half-and half
1 large garlic clove
1/2 cup grated parmesan
1/4 cup gruyere
2 1/2 lbs baking potatoes
grated nutmeg
ground white pepper

1. Combine 1 cup milk, 1 cup half-and-half, 1 large garlic clove, 1/2 cup grated parmesan, and 1/4 cup gruyere in pan over moderate heat.

2. Peel and slice the baking potatoes, and toss them with grated nutmeg and ground white pepper.

3. Transfer potatoes to gratin dish and pour milk mixture over. Sprinkle with extra gruyere and parmesan. Bake at 400 for 1 hour.
