Pot roast is definately the best thing to come out of a crock pot.

Brown the chuck roast (you don't have to, but it's better). I have a crock pot that I can put right on the stove so I don't have to dirty an extra pan. If you use a separate pan to brown the meat, remove the meat to the crock pot.

Add two large onions cut in quarters, four large stalks of celery cut in big pieces and some baby carrots to the browning pan. Brown them a little bit and add them to the pot roast. Again, you don't have to brown the veggies either but it's better. The dish will be good without browning, just not as good, depends on how much time and effort you have.

Add a carton of beef stock to the crock pot til it's almost to the top of the roast. Cook until it's done. I cook it on high if I'm in a hurry or low if I'm gone all day. Start it in the morning, it's good to eat when you get home from work. It should cook at least six hours.

You can make a thick gravy or serve the juice just the way it is. You might have to add some boullion to make it taste good. This recipe is also good with beef cubes (stew meat) you just don't have to cook it as long.

I serve the roast with potatoes and carrots, you can add them to the crock pot close to the end or cook them separate.

I made chicken tortilla soup in the slow cooker this weekend and it was great! Left-overs were even better.

2 boneless chicken breasts
1 can Rotel
1 can of Del Monte Tomatoes with green peppers
1 can Enchilada Sauce
1 can Black beans(rinsed and drained)
1 can Mexi-corn drained
1 bag of Boil in Bag rice
Chicken Stock(add to desired thickness)
Taco seasoning

Boil chicken in water. Boil rice for half time required on box. Combine remaining ingredients in crock-pot. Once rice is finished add to pot. Drain chicken and shred and at it to the pot. Serve over tortilla chips and top with cheese. It is fantastic!

This is soooo easy. Take some chicken, doesn't matter if its legs, thighs etc. You can even put them in the slow cooker frozen. Add some peeled potatoes cut in fourths, and carrots, onion. Turn it on low. It makes it own juice, easy and good!
