My mother and I have been searching for about 20 years for a buttermilk pie recipe. The Lighthouse Restaurant's cook wouldn't give hers out. It's not custardy, it's more of a cream pie.

Buttermilk Pie Recipe #48206
This is an old southern favorite. From Miss Daisy's Tea Room, Nashville, TN

1½ hours 30 min prep
1/3 cup butter (no substitutes)
1 cup sugar
3 egg yolks, beaten
3 tablespoons flour
1/4 teaspoon salt
1 teaspoon lemon juice
1/2 teaspoon grated fresh lemon rind
1 1/2 cups buttermilk
3 egg whites, stiffly beaten
1 unbaked 9 inch pie shell

Cream butter and sugar together.
Add egg yolks and beat well.
Add flour, salt, lemon juice and rind; mix thoroughly.
Add buttermilk and mix well.
Fold in beaten egg whites.
Pour filling into crust and bake for 10 minutes at 450 degrees.
Lower heat to 350 degrees and continue baking 40 minutes.
May need to cover crust edges with foil it starts to get too brown.

Buttermilk Pie
Makes: 4 Servings

PIE FILLING
1 cup buttermilk
4 eggs
1/2 cup butter
1 teaspoon vanilla
1 1/2 cups sugar
2 tablespoons flour
1 pinch salt

PIE CRUST
1 cup flour
1/4 teaspoon salt
1/3 cup vegetable shortening plus-
1 tablespoon vegetable shortening
2 tablespoons (maybe 3) cold water

TOPPING
1 cup pie filling or fresh berries
2 cups whipped cream

For Crust:
Mix flour and salt in a small bowl. Cut in shortening with fork until crumbs are coarse. Add cold water until it forms a ball. Then press dough into a pie pan.

For Filling:
In a large mixing bowl mix eggs well. Add all other ingredients and mix. Pour filling into the uncooked pie shell. Bake at 400 for 10 minutes then turn it down to 350 for another 50-60 minutes. (Until only the very middle giggles a little.)

Top with berries and whipped cream if desired.

BUTTERMILK CREAM PIE


1 cup granulated sugar minus 2 tbsp
1/4 cup flour plus 2 tbsp
1 (5oz) can evaporated milk
1 1/3 cups buttermilk
3 egg yolks
1 tsp Watkins Vanilla, Original Double Strength
1 (9-inch) pie shell, baked



Mix sugar and flour and add evaporated milk, buttermilk and egg yolks. Stir until smooth. Place in medium-size saucepan over medium heat and stir constantly until it thickens and begins to boil. Remove from heat, let cool, and add vanilla. Pour into baked 9-inch pie shell.



Meringue
3 egg whites
6 tbsp granulated sugar
1/4 tsp Watkins Baking Powder



Beat egg whites until stiff. Add sugar gradually. Beat well and fold in baking powder. Place on top of pie filling and bake at 325*F for 15 minutes.
