Okay make sure you wash them really good and you want to also get the bad ones out they look brown and are ugly. Then make sure you put enough water in a heavy pot or crock pot. put the beans once they start to boil and are starting to get soft. (about 1-2 hours) Salt the beans to taste and place some salt pork slices in the pot or some regular Ole bacon. Once they are completely soft. they are ready to eat.
Another alternative is Frijoles ala Charra, adding a small jar of pace picante sauce mild, medium, or hot whatever is your preference. along with some diced cilantro leaves diced jalapeno peppers and some diced tomato and onions. let every thing boil till cooked and all flavors combine taste and salt if necessary. Very Delicious!!!!! Oh and if your doing this variation don't skimp on the bacon cause it adds so much flavor!!!!!!

Hi, I'm Mexican, and you know us messycans.....we love our pinto beans. I usually cook 2 cups of beans in a large pot. I seek out the rocks in the beans first. Then I rinse them in cold water, all the while I have the pot 3/4's filled with water and bring it to a boil. I add salt to taste and it is easy to over salt so , I make the water to where it is just a little over salty...you can always add more hot water if it is too salty. I then add the beans and reduce the heat to a simmer and cover the pot. I cook the beans for at least 3 hrs.....good luck...;)

Enjoy one of our southern cooking recipes today!
Pinto Beans and Ham Hocks
3 smoked ham hocks
2 lbs. dried pinto beans
1/2 teaspoon garlic powder
1/2 teaspoon crushed red pepper
1/4 teaspoon ground black pepper
1/2 teaspoon salt
2 teaspoons hot sauce
1/2 medium chopped onion
Boil ham hocks on high heat for 45 minutes. Add all seasonings except hot sauce and onion. Continue boiling for 20 minutes. Add pinto beans, hot sauce, and onion. Boil on medium heat until beans are done to taste.
Note: To speed up cooking of beans and reduce the gas beans produce, soak beans in cold water overnight or for three hours during the day.
Serve with rice and a meat side dish. You can also use the ham hocks as your meat side dish.

If you boil the beans for ten minutes, let cool a few minutes,dump first water and then add to the bottom of the crock pot you will have better luck. Pork shanks (hocks) add good flavor, a couple of cubes of bouillon (any flavor), then adjust salt later before serving. Cured pork, or bacon has salt already. Add a goodly amount of ground black pepper.

I cut up un-cooked bacon and put it in my slow cooked beans. I like the flavor better than that of a ham-hock. I salt and pepper to taste and also add chopped onion and garlic powder.

Cook them, then salt them to taste. They absorb salt like crazy while they cook, and it's easy to overdo.
Some chopped onion and a little chopped carrot are always good additions, along with sliced smoked sausage or kielbasa. A dab of tomatoes or some chilli powder will liven them up, too, and you can always add a little salsa.
And don't forget the cornbread or corn muffins to go with them! ;-)

generally I salt to taste.
depends what you have available right - they'll be edible, you just need to cook with ingrediants you like, that is part of learning about cooking..
today i had rice with fresh pineable, black beans, and pimento (peppers and salt) as well as a little pepper. It was yum.
if you are eating to eat just eat. if you are eating to savour, play with you favorite palates available, try mixing and matching.. if you have memory of the tastes of specific ingredients as well as the scent and appearance etc..
