At work thy sevrve some sort of scrammbled eggs made with powdered eggs. Do they have carbs or not?

Yes. But how many varies widely.

I have a pkg of USDA commodities dried eggs, and they are listed as having 4g per serving. My old copy of MasterCook says they have 1g per serving. If you can find the packaging for the product they are using, it will have the number of carbs per serving.
