EASY SPANISH RICE
4 cups rice
2 cans diced tomatoes
2 packets taco seasoning
salt, pepper, chili powder, and cumin to taste
several sprigs torn fresh cilantro
4 cups water
Put all ingredients in rice cooker and stir, will cook automatically until rice is done

Here are two, one for slow cooker and one regular cooking:
SLOW COOKER SPANISH RICE
1 Cup Uncooked Brown Rice
1 Cup Water
1 Medium Onion
1 Small Bell Pepper
1 Teaspoon Chile Pepper
1/2 Teaspooon Cumin
1/8 Teaspoon Garlic
1 Can (14 1/2 oz) Diced Tomatoes
Salt and Pepper
Cook on Low 2-3 Hours. (Not sure about the time here)
REGULAR COOKED SPANISH RICE
INGREDIENTS:
2 tablespoons olive oil
1/2 cup chopped onion
1/4 cup chopped green pepper
1 clove garlic, minced
1 cup rice
1 14-1/2 ounce can tomatoes
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
DIRECTIONS:
Heat oil in a medium saucepan. Saute onion and green pepper until tender.
Add garlic and cook briefly. Add rice and cook, stirring, until slightly
toasty.
Meanwhile, drain the tomatoes, reserving juice. Chop tomatoes. Add water to juice to make 2 cups. Add liquid to pan, along with remaining ingredients. Bring to a simmer, lower heat, cover and cook until rice is cooked and liquid is absorbed, about 20-25 minutes.
Yield: 4 servings

My Fresh and Easy Spanish Rice Recipe
Ingrdient's
2 cups white rice
1 8oz can of tomato sauce
1/2 a cup of red wine
2 chopped regular tomatoes
1/2 a diced green bell pepper
1/2 a diced red bell pepper
1/2 a medium onion, chopped
1 jalepeno, diced
1 clove of garlic, chopped
1 teaspoon safflower (Mexican safflower is fine) optional
1 tablespoon oregano (dried)
1 bay leaf
salt/pepper to taste
Directions;
Cook your rice in a pot, as dircted on the package, but put your herbs, also the bay leaf in with it.
In a skillet, saute your vegetables in vegetable oil, DONT USE OliveOil! The flavor will be too strong.
(cook all of your vegetables together, as the tomatoes need to break down.
Add your red wine to the skillet, stir, then add your cooked rice and tomato sauce, salt and pepper as needed.
Stir until the rice dish is thick!
You're done!

okay i reviewed the other answers and none of them sound authentic Iam Mexican and have made rice about every other day of my life. Well here's how I make it.
Ingredients:
2 cups white long grain rice (NOT 5 minute rice) a good one is comet or riceland.
1 can tomato sauce
ground cumin, salt, ground pepper, and garlic powder
(usually I use whole spices fresh garlic, peppercorns, and whole cumin and smash it in a molcajete which looks like a bowl made out of stone with a seperate stone to smash everything together after completely ground you fill with water and pour out to the hot pan)
corn or vegetable oil
thick wedes of onion seperated
water.
Okay in a large pan or sauce pan heat some oil add rice and onion pieces let brown a little. When a even tan color has been reached lower the heat. you want to be careful not to burn it keep stiring the rice as it fries remove from heat and in a cup of water you want to mix 1/2 a tsp of ground cumin, a 1/2 a tsp of garlic powder, a 1/4 tsp of ground pepper and 1/2 tsp salt. Mix well, Open can of tomato sauce. Now put pan back on heat when rice is hot and starts to fry again pour the spices over the rice carefully not to burn yourself as it will start to sizzle. mix a little and pour the can of tomato sauce in pan then mix again and pour enough water to cover all the rice about 2 cups stir to desolve the spices and sauce completely and salt to taste. Now cover tightly and bring to a boil and simmer till water is evaporating. check to make sure its not sticking to the bottom of pan but do not mix so you don't break the grains of rice. test to check the softness of the rice if still hard add more water being carefull not to add to much. It shouldn't be too hard to make this and its really worth trying out its awesome my favorite.

This is easy and good. Also you can add other ingredients that you think appropriate to something "Mexican". (olives, ortegas, chilies, etc.)
Cook rice separately.
saute onions, garlic and ground meat (beef, chicken, pork, or turkey} No meat at all if you wish, substitute beans and have a complete protein.
Add enough packages of good Taco seasoning for the amount weight of rice and meat or bean you are using: just estimate, usually two packages. buy some extra packs and if you want it spicier, add more, otherwise save for later.
Add water, add rice, cook until most of the water is gone, or all of it gone, cover, let sit until you are ready to serve). Preparation time for this meal is about 20 minutes from start to serving, but can be done a day or two in advance if you like, and reheat in oven or microwave.

Spanish Rice
4 med Tomatoes, quartered
2 1/4 cup Water
1 sm Onion, chopped
1 cup Brown rice
2 tsp Garlic paste
1 tsp Seasoned salt
5 dsh Tabasco sauce
1 tsp Molasses
1 cup Chopped tomatoes
1/2 cup Chopped fresh parsley
1/2 cup Canned tomato sauce
1/2 lrg Green pepper, diced
Place quartered tomatoes and water in blender jar; puree. Pour into large pot, add onion, and boil. Add rice, garlic paste, salt, Tabasco, and molasses. Lower heat and simmer, covered, until rice has absorbed almost all the water, usually 40-45 minutes. Add chopped tomatoes, parsley, and tomato sauce, stir well, and cover.
Fry bacon crisp in skillet; remove and blot on paper towels. Saute green pepper in bacon drippings; remove using slotted spoon and add to rice mixture. Crumble bacon and add to rice mixture. Mix well and remove from heat.
Preheat oven to 350 degrees. Lightly oil bottom of 1-quart casserole; pour rice mixture into it and bake for 20 minutes, or until rice is tender.
Yield: 3 cups.

I just made some last night!
1 lb of hamburger
1 small can of tomato sauce
1 small can of water (use tomato sauce can)
1 small onion
1 green bell pepper
6-8 slices of American Cheese chopped into small pieces
garlic powder
salt
Rice
1 cup of water
1 cup of rice
First saute onion and bell pepper in frying pan and set aside. Next fry up hamburger meat and no longer pink. While doing that put your water on you boil and add your rice! keep stirring until rice is cooked approximatly 15 minutes. Next in a bowl mix onion mixture, hamburger, cheese, tomato sauce and cooked rice. Add can of water and season to taste. Pour into a 2 quart casserole and bake approximately 45 minutes until water and tomato sauce has been incorporated and is no longer wet wet inside!

This how we make it at home
Red Rice(Party Rice)
2 Tbs achote seeds or achote powder(found in Mexican food asile)
1/2 tsp salt
2 Tbs cooking oil
2 cups chopped onions
2 cups water
2 cups rice
Soak achote seeds in 1/2 cup warm water for 30 minutes. Add salt. Rub or press achote seeds to get color. Strain liquid into small bowl. Saute onions in oil. Add rinsed rice to boiling achote colored water. Reduce heat to medium high for five minutes or until water evaporates. Reduce heat to low for 15 minutes.

Spanish Rice
list of ingredients
1 lb of burger *(you don't have to have meat)
2 slices of bacon in pieces
2 cloves of garlic minced
1 cup shortening (oil will do)
4 cups uncooked long-grain rice
5 cups warm tap water
1 1/4 cups green bell pepper sliced
1 1/4 cups onion sliced (white)
1 small can of tomato purée
1 tablespoon chicken stock base
1 tablespoon ground cumin
1 teaspoon salt "or more"
1/2 teaspoon freshly ground black pepper
1 1/2 teaspoons paprika
Brown burger, drain & set aside.
Melt shortening into a large, heavy pot on low heat Cook bacon & garlic(do't burn) for a minute then set aside.. Add rice stir frequently on med-high until golden, about 10 minutes. Drain off grease. Add water, bell pepper, onion, tomato, chicken base, cumin, pepper, paprika,garlic, bacon and browned meat. Cook over high heat 20 minutes until rice begins plump.
Cover with foil and transfer to a 350 degree F oven for 15 minutes. Stir, let rest at least 20 minutes before serving. You absolutely must have black beans with this. Grilled margarita chicken breast with mango tomato salsa. Doesn't take long and is all easy to fix.
Margarita Chicken
Ingredients:
4 Boneless, Skinless Chicken Breast
1 C. Liquid Margarita Mix
Fresh Ground Black Pepper (to taste)
Preparation:
Pour margarita mix over chicken breast and let marinate for 2 hours in refrigerator.
When ready to prepare drain and dust with black pepper to taste.
If you do not have a grill use a iron skillet and bring to medium high temperature and spray an oil coating into pan and braise chicken breast until done on each side. Place chicken breast atop of black beans and serve with a serving of your favorite rice and a helping of mango salsa.
Mango Salsa
1 cup diced fresh mango
1/3 cup roasted red peppers, drained & diced
1/3 cup diced red onion
1 jalapeno pepper, seeded, minced
2 tablespoons fresh cilantro, chopped
1 tablespoon fresh lime juice
Combine all ingredients and chill. Serve.
Makes 1 1/2 cups of mango salsa.

My mom's. IT is not that good for you but here tis.
Fry bacon, more is better. Crisp. Drain.
Fry hamburger. Drain.
Chop green pepper and onion, fry with burger.
Add tom sauce, canned diced tomato, oregeno, chilli powder. Add cooked rice. Put in casserole dish. Bake.
