I think a lean piece of beef is best whether it is hamburger or steak or roast, lean is better because the fat produces too much grease while cooking and you can't make good gravy or sauce with too much grease...
I usually pour off the grease in my sink or if I am cooking hamburger crumbled up, I will let it continue to cook in the pan till the grease is all used up..
This makes the meat cook more well done also and soaks up the grease...
I find that after I cook hamburger meat, I season it and any seasoning will soak up any leftover grease as well...

That is an absolutely false statement, about leaner meat being better, in flavor, and in health. Fattier meats have more flavor, and texture than a lean meat. When cooking a lean steak, burger, whatever, there is no fat to hold the meat together, and it breaks apart. The nutrition will be lost in a lean meat unless cooked quickly, and rare to medium rare.
On the grill, using a lean steak, any meat will dry out the meat, and become tough. I dont think you'll like the taste of it. I wouldnt! Dried out meat tastes awful, and you will have eaten a very big piece of jerky, hardly edible, and no nutients. Yuck!
Most of the fat is cooked out anyway when cooking meat, it holds flavor, loses less vitamins, IS healthy, and tastes great! Have fun with your food, LOL! Remember fattier meat hold in more vitamins, and flavor, and just an extra hint, leaner meats cost more than the regular.

Most would agree that leaner meat is better for you. However, the fat is what keeps you full longer, so it's best to have a little fat with it.

Leaner meat may be better for your health, but is not necessarily better tasting. A marbled steak is way tastier than a lean one.

I'm not sure that it is better tasting. The fat is the bad part when cooking meat but, it makes the meat taste better. Without it the meat does not taste good to me. We are damned if we do, and damned if we don't. I cook mine in the fat but drain it and don't eat the fat. It makes me feel like I get the best of both worlds.

Well, I suppose it depends. A Filet mignon is an excellent cut of beef. However, hamburger meat needs some fat in it to give it flavor. Fat = flavor, so some fat is necessary. Of course, the leaner it is, the healthier it is.

Leaner meat is healthier, but it surely doesn't taste better. I much prefer a well marbled cut of meat.

I disagree!
Meat gets most of it's flavor from it's fat content. The less fat there is on the meat you are cooking, the less flavor!
Fat also acts as a moisturizer. The less fat you have on a piece of meat the dryer it cooks and the tougher!
Lean meet may be best for your arteries but not much fun to eat!

With beef and lamb it is better for the flavor if there is SOME "marbling" of fat that makes the roasted taste more flavorful and tender.For other I think Yes it should be lean and it is better for you. tip: don't salt meat before you cook it.
