Use dow rods or something that measure the thickness you desire and place them on either side of your dough. Put your rolling pin handles on top of the rods and roll out the dough, you will not be able to roll beyond that thickness.

stick a toothpick in thickest part --- remove it, clasping it with your fingers at the point that the crust came up to - and then estimate thickness.
