Pepper Jack is perfect for a ham sandwich. It adds just enough bite to wake it up

I like Swiss cheese on extra sour rye, with mustard. BUT ANYTHING you and your family likes it perfectly OK, Why worry?
Be happy!
Offer a variety for a luncheon buffet and let them make their own for a group. Easier for you, too and will stay fresher.

** Some of these answers specify a "good" cheese, always meaning expensive. Be more selective of the quality of the ham than the cheese, if you must; however, few can tell the difference in a sandwich as long as it's fresh and tasty. Even process food type stuff sold as "cheese" often tastes just fine if you are hungry and the company is good.

Most restaurants will use Swiss cheese, as is the typical recipe for a Ham and Cheese sandwich, but I prefer Mozzarella, or Provolone.

Your favorite, of course!

Personally, I enjoy Gruyere with ham because Gruyere is rather sweet and complements the salty ham flavors very nicely. You can find it in the deli section of most groceries. It's a little more expensive, but it's worth it to make a really nice sandwich.

There is no doubt that on a ham sandwich the best kind of cheese to go with is one of my favorites......Swiss Cheese......now, my favorite is abit less bitey and more creamy than the regular swiss......the one that is my favorite is called " Baby swiss".

hope this helps and God bless ya!
